BROCCOLI, RICE & GROUND BEEF CASSEROLE

Broccoli, Rice & Ground Beef Casserole image

I make this casserole frequently for supper because it is cheap, fast, filling and great for kids. It's even good for very young kids who are just beginning to eat table foods. When I was a kid, we would have this as a side dish for holiday dinners, but I make it as a simple supper with crackers or dinner rolls and salad. You can substitute ingredients to fit what you have on hand.

Time 20m

Yield 4 servings

Number Of Ingredients 11

2 tablespoons vegetable oil
1 large egg, beaten
1/2 pound ground beef
Kosher salt
1 cup chopped broccoli florets
1 teaspoon minced garlic
1 teaspoon finely grated fresh ginger
1 teaspoon soy sauce
3 cups cold, cooked long-grain white rice
2 tablespoons thinly sliced scallions
1 tablespoon salted roasted peanuts

Steps:

  • Heat a large nonstick skillet or wok over high heat and then swirl in 1 tablespoon of the oil. When the oil begins to smoke, add the egg and swirl the skillet to make a flat egg pancake that is only half set, about 10 seconds; scoop onto a plate.

Add the remaining tablespoon oil, then add the broccoli, garlic, ginger, soy sauce and 1/4 teaspoon salt and stir-fry until the broccoli is crisp-tender, 2 to 3 minutes.
  • Add the rice, stirring to break up any clumps, and spread it out in the skillet. Cook until heated through, about 3 minutes. Return the egg and the beef and any juices to the skillet and cook, stirring and breaking up the egg to mix it in thoroughly, about 1 minute. Season with additional salt if needed. Tips:

  • Choose the right ground beef: For the best flavor and texture, use lean ground beef (80/20 or 90/10) that is fresh and has a fine grind.
  • Don't overcook the beef: To keep the beef tender and juicy, cook it over medium heat until it is no longer pink in the center, about 5-7 minutes.
  • Use fresh broccoli: Fresh broccoli florets will give the casserole a bright green color and a crisp-tender texture. If you don't have fresh broccoli, you can use frozen broccoli that has been thawed and drained.
  • Season the casserole well: Use a combination of salt, pepper, garlic powder, and onion powder to season the casserole. You can also add other herbs and spices to taste, such as dried oregano, basil, or thyme.
  • Don't overmix the casserole: When you mix the casserole ingredients together, be gentle and do not overmix. Overmixing can make the casserole tough.
  • Bake the casserole until it is bubbly and golden brown: The casserole should be baked in a preheated oven at 350°F (175°C) for about 30 minutes, or until it is bubbly and golden brown.

Conclusion:

Broccoli rice ground beef casserole is a delicious and easy-to-make dish that is perfect for a weeknight meal. It is packed with flavor and nutrients, and it is sure to be a hit with your family and friends. So next time you're looking for a quick and easy dinner recipe, give broccoli rice ground beef casserole a try. You won't be disappointed!
