1 head broccoli, stalk and florets chopped separately
2 cups water
2 tablespoons olive oil
1 tablespoon minced garlic
½ cup uncooked white rice
salt to taste
1 squeeze lemon juice

Steps:

  • Combine broccoli stalk and 1 cup water in a blender; blend until pureed. Add remaining cup of water for a total of 2 cups of green water to cook the rice in.

2/3 cup milk
1/4 teaspoon pepper, if desired

1 cup fine soft bread crumbs (about 1 1/2 slices bread)
1 tablespoon butter or margarine, melted

  • Heat oven to 350°F. Spray 13x9-inch (3-quart) glass baking dish with cooking spray. Cook rice in water as directed on package.

1 small onion, chopped
2 cloves garlic, minced
1/4 teaspoon thyme
1 cup long grain rice

1 1/2 cups chicken broth

1 teaspoon lemon, zest of
