5 cups fresh broccoli, cut into small florets
1 1/2 cups cottage cheese
3 eggs
1/4 cup butter or 1/4 cup margarine, melted
1/3 cup flour
1 (8 3/4 ounce) can whole kernel corn, drained
2 cups shredded swiss cheese
1/4 cup finely chopped onion
salt and pepper
4 drops hot sauce or 1/4 teaspoon cayenne pepper (optional)
2 tablespoons grated parmesan cheese (optional)
8 -10 slices bacon, cooked and crumbled

Steps:

  • Set oven to 350 degrees.
  • Grease a 13 x 9-ich baking pan.
  • Cook the broccoli florets, covered in a small amount of boiling water for 7-8 minutes, or until firm-tender (don't overcook); drain well.
  • In a food processor, or an electric blender, combine the cottage cheese, eggs, butter and flour until smooth; set aside.
  • Combine the broccoli, corn, Swiss cheese, chopped onion, salt, pepper, hot sauce (if using); mix well to combine.
  • Stir in the cottage cheese mixture and the 2 Tbsp grated Parmesan cheese (if using).
  • Transfer into prepared baking dish.

  • **NOTE**1/8- 1/4 tsp cayenne pepper may be subsituted for the hot sauce, but the hot sauce is definately better!

1 (24-ounce) carton cottage cheese
3 eggs
1/4 cup butter or margarine, melted
1/3 cup all-purpose flour
1 (8-3/4 ounce) can whole kernel corn, drained
2 cups (8 ounces) shredded Swiss cheese
1/4 cup finely chopped onion
1/2 teaspoon salt
1/4 teaspoon pepper
4 drops of hot sauce
8 slices bacon, cooked and crumbled

Steps:

  • Cook broccoli, covered, in a small amount of boiling water for 10 minutes or until tender. Drain. Combine cottage cheese, eggs, butter, and flour in container of a food processor; process until smooth. Set aside. Combine broccoli, corn, and next 5 ingredients in a large bowl; stir in cottage cheese mixture. Spoon into a lightly greased 12x8x2-inch baking dish. Sprinkle bacon over casserole. Bake casserole at 350 degF for 45 minutes.

24 oz small curd cottage cheese
3 eggs
1/4 c all purpose flour
1/4 c butter, melted
20 oz frozen chopped broccoli, thawed and drained (or use fresh!)
2 c shredded swiss cheese
1 can(s) whole kernel corn, drained (8 3/4 ounce can)
1/4 c finely chopped onion
1/2 tsp salt
1/4 tsp pepper
4 dash(es) hot sauce
2 Tbsp butter
1/3 c soft breadcrumbs
8 slice bacon, cooked and crumbled

Steps:

  • 1. Combine the first 4 ingredients in the container of a blender or food processor. Process on high for 1 minute or until smooth, stopping once to scrape down the sides. Set aside.
  • 2. Combine the broccoli and the next 6 ingredients in a large bowl. Add the reserved cottage cheese mixture; stir well. Pour into a lightly greased shallow 2 quart casserole dish.
  • 3. Melt 2 tablespoons butter in a small saucepan over low heat; add the breadcrumbs and cook until golden, stirring occasionally. Remove from the heat; stir in the bacon.
  • 4. Sprinkle the breadcrumb mixture over the casserole. Bake uncovered at 350 degrees for 45 minutes or until thoroughly heated.
