Brown Rice and Onion Pilaf image

Provided by Jacques Pepin

Categories     easy, side dish

Time 58m

Yield 6 servings

Number Of Ingredients 8

1 tablespoon unsalted butter
2 tablespoons olive or vegetable oil
3/4 pound onions (3 to 4 onions), peeled and cut into 1/2-inch cubes (2 1/2 cups)
1 teaspoon herbes de Provence or Italian seasoning
2 cups brown rice (about 1 pound)
5 cups water
2 teaspoons salt
1/2 teaspoon freshly ground black pepper

Steps:

  • Heat butter and oil in a large sturdy saucepan. When hot add the onions and saute over medium-to-high heat for about 2 to 3 minutes. Add the herbes de Provence and rice and mix well to combine. Add water, salt and pepper and bring mixture to a boil, stirring so it does not stick.
  • When boiling, reduce the heat and cook, covered, over very low heat for about 40 minutes, until rice is tender, a little chewy and most of the moisture has been absorbed. Check rice near end of cooking time; it may take a little longer than 40 minutes to absorb all the water and cook through. Serve with sweet and sour curried chicken.

Yield Serves 2

Number Of Ingredients 5

1/2 cup chopped onion
1/2 cup corn kernels, thawed if frozen
1 tablespoon unsalted butter
1/2 cup unconverted long-grain rice
1 teaspoon salt

Steps:

  • In a heavy saucepan cook the onion and the corn in the butter over moderately high heat, stirring, until the vegetables are browned. Add the rice, stir the mixture until the rice is coated with the butter, and stir in 1 cup water and the salt. Bring the liquid to a boil, stirring, and cook the pilaf, covered, over low heat for 25 to 30 minutes, or until the liquid is absorbed.

Tips:

  • Choose the right rice: Long-grain brown rice is the best choice for this pilaf, as it cooks evenly and has a slightly chewy texture.
  • Soak the rice before cooking: Soaking the rice for 30 minutes before cooking helps to reduce the cooking time and results in a more tender pilaf.
  • Use a good quality broth: The broth you use will make a big difference in the flavor of the pilaf. Use a homemade broth or a good quality store-bought broth.
  • Sauté the onions until caramelized: Caramelizing the onions adds a delicious sweetness and depth of flavor to the pilaf.
  • Add some spices: A blend of spices, such as cumin, coriander, and turmeric, will add warmth and flavor to the pilaf.
  • Cook the rice until it is tender: The rice should be cooked through but still have a slightly chewy texture.
  • Fluff the rice before serving: Fluffing the rice with a fork will help to separate the grains and make the pilaf light and fluffy.
