SESAME BROWN RICE AND CABBAGE

Provided by Martha Stewart

Categories     Food & Cooking     Ingredients     Pasta and Grains     Rice Recipes

Number Of Ingredients 9

2 tablespoons safflower or other neutral-tasting oil
1 cup coarsely chopped napa cabbage (1/4 head)
2 teaspoons peeled and minced fresh ginger
1 small garlic clove, minced
1 cup long-grain brown rice
Coarse salt
1 1/2 cups water
2 teaspoons rice wine vinegar (unseasoned)
1 tablespoon sesame seeds

Steps:

  • Heat oil in a 4-quart saucepan with a tight-fitting lid over medium. Add cabbage, ginger, and garlic; cook (uncovered), stirring often, until cabbage is wilted, about 2 minutes. Spoon cabbage mixture onto plate.
  • Add rice to the pan, and stir to coat with oil; cook, stirring, until lightly toasted, about 1 minute. Add 1 teaspoon salt and the water; bring to a boil, then reduce heat to low. Cover and cook 30 minutes. Remove from heat and let sit, covered, 5 minutes. Fluff with a fork, then add cabbage mixture, vinegar, and sesame seeds, and toss to combine.

Tips:

  • Choose the right rice: Short-grain brown rice is the best choice for this recipe, as it cooks up tender and fluffy. Medium-grain or long-grain brown rice will also work, but the texture will be slightly different.
  • Rinse the rice: Rinsing the rice before cooking helps to remove excess starch, which can make the rice gummy. Simply place the rice in a fine-mesh strainer and rinse it under cold water for a few minutes, until the water runs clear.
  • Use the right ratio of water to rice: The water to rice ratio for cooking brown rice is 2:1. This means that for every 1 cup of brown rice, you need 2 cups of water.
  • Cook the rice over low heat: Cooking the rice over low heat helps to prevent the rice from boiling over and becoming mushy. Bring the water to a boil, then reduce the heat to low, cover the pot, and simmer for 45-50 minutes, or until the rice is tender and all of the water has been absorbed.
  • Fluff the rice: Once the rice is cooked, fluff it with a fork to separate the grains. This will help to prevent the rice from becoming sticky or clumpy.
  • Add sesame seeds: Toasted sesame seeds add a nutty flavor and a nice crunch to the rice. Simply toast the sesame seeds in a dry skillet over medium heat for a few minutes, until they are golden brown.

Conclusion:

Brown rice with sesame seeds is a healthy and delicious side dish that can be enjoyed with a variety of meals. It is a good source of fiber, protein, and vitamins, and it is also low in calories and fat. The sesame seeds add a nice flavor and crunch to the rice, making it a great option for a quick and easy meal.
