BROWN SUGAR APPLE PIE TO DIE FOR

Brown Sugar Apple Pie to Die For image

Make and share this Brown Sugar Apple Pie to Die For recipe from Food.com.

Provided by Boomette

Categories     Pie

Time 1h30m

Yield 1 pie

Number Of Ingredients 10

1 double crust, refrigerated
8 cups apples, peeled, cored, and sliced
1/2 cup light brown sugar, firmly packed
1 tablespoon fresh lemon juice
1/2 teaspoon ground cinnamon
1/4 teaspoon ground nutmeg
2 tablespoons cold unsalted butter, cut into little pieces
glaze
milk
granulated sugar

Steps:

  • If you haven't already, prepare the pastry and refrigerate for at least one hour, until firm enough to roll.
  • On a sheet of lightly floured wax paper, roll the larger portion of pastry into a 13 1/2-inch circle with a floured rolling pin. Invert the pastry over a 9-inch deep-dish pie pan. Center it, then peel off the paper. Gently tuck the pastry into the pan, without stretching it, and let the overhang drape over the edge of the pan. Refrigerate. Preheat the oven to 400°F.
  • While the pie shell chills, make the filling. Combine the apples, brown sugar, lemon juice, cinnamon and nutmeg in a large mixing bowl; toss well to mix. Set aside while you roll the top pastry.
  • On another sheet of lightly floured wax paper, roll the other half of the pastry into an 11 1/2-inch circle. Turn the filling into the refrigerated pie shell, smoothing the apples with your hands. Dot the top of the pie with butter, dropping the pieces here and there over the apples.
  • Lightly moisten the rim of the pie shell with a wet finger or pastry brush. Invert the top pastry over the filling, center it, then peel off the paper. Press the top and bottom pastries together along the dampened edge. Trim the pastry with scissors or a paring knife, leaving a 1/2-inch overhang all around, then sculpt the overhang into an upstanding ridge. Make several 2-inch-long slits in the top pastry, at the 12, 3, 6, and 9 o'clock positions; the bottom of each slit should just reach the ege of the pie. Lightly brush the top pastry with milk and sprinkle with granulated sugar.
  • Place the pie directly on the center oven rack and bake for 30 minutes. Remove the pie from the oven and place it on a large, dark baking sheet covered with aluminum foil. Reduce the oven temperature to 375°F Put the pie on the baking sheet back in the oven and bake for an additional 30 minutes; when the pie is done, you should be able to see the juices bubbling up onto the crust.
  • Transfer the pie to a cooling rack and let cool for at least an hour before slicing.

APPLE CRUNCH PIE I

Apple Crunch Pie I image

This pie has a delicious sweet crumb topping with a tart, but sweet, apple filling. Eat straight or ala' mode.

Provided by Lisa McCovey

Categories     Desserts     Pies     Apple Pie Recipes

Time 1h30m

Yield 8

Number Of Ingredients 12

1 (9 inch) unbaked deep dish pie crust
1 cup all-purpose flour
½ cup packed brown sugar
½ cup white sugar
1 teaspoon ground cinnamon
½ cup butter
7 Granny Smith apples - peeled, cored and sliced
1 tablespoon lemon juice
½ cup white sugar
3 tablespoons all-purpose flour
1 teaspoon ground cinnamon
⅛ teaspoon ground nutmeg

Steps:

  • Place rack in lowest position in oven. Heat oven to 450 degrees F ( 230 degrees C).
  • To Make Topping: Mix 1 cup flour, 1/2 cup brown sugar, 1/2 cup white sugar and 1 teaspoon cinnamon; cut in butter or margarine until mixture is moist and crumbly, and clumps together easily.
  • To Make Filling: Peel, core, and slice apples into approximately 1/8 inch slices. If you cut them too thick you'll have crunchy apples. In another bowl, toss cut up apples, white sugar, lemon juice, 1 teaspoon cinnamon and nutmeg. Sprinkle in flour, and stir until apples are evenly coated.
  • Layer apple slices in pie shell. You will have a lot of apples, but they will shrink. Layer them higher in the middle. Pour left over juice from apple mixture over apples. Pat the brown sugar topping evenly over apples to make a top crust.
  • Place pie on cookie sheet in oven to catch juice droppings. Bake for 15 minutes. Reduce oven temperature to 350 degrees F (175 degrees C), and bake for 45 minutes to one hour; bake until center of pie has no resistance. If top starts to get too dark, cover with piece of foil. Cool on wire rack before serving.

Tips:

  • Use a sharp knife to peel and slice the apples thinly and evenly, this helps to ensure they cook consistently.
  • Don't over mix the dough, over mixing can result in a tough crust.
  • Keep the butter cold when making the dough, this helps to create flaky layers.
  • Chill the dough for at least 30 minutes before rolling it out, this helps to prevent the dough from shrinking in the oven.
  • Brush the edges of the pie crust with egg wash before baking, this helps to create a golden brown crust.
  • Use a pie shield or foil to protect the edges of the crust from burning.
  • Allow the pie to cool for at least 1 hour before serving, this helps to allow the filling to set.

Conclusion:

This brown sugar apple pie is the perfect dessert for any occasion. It's easy to make and absolutely delicious. With a flaky crust, sweet and tangy filling, and a hint of cinnamon, this pie is sure to be a hit. So next time you're looking for a special treat, give this brown sugar apple pie a try.
