Time 40m

Yield 3 doz, 12 serving(s)

Number Of Ingredients 10

1 1/2 cups flour
1 cup rolled oats
1 cup sugar, brown
1/2 cup walnuts (optional) or 1/2 cup pecans, chopped (optional)
1/4 teaspoon salt
3/4 cup butter
1 1/2 cups dates, pitted and chopped
1/4 cup sugar, brown
1/2 cup water
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 350 degrees.
  • Date Jam
  • Combine dates, sugar, water and vanilla in saucepan and bring to a boil.
  • Simmer 5 minutes, until mixture resembles a thick paste.
  • Cool completely
  • Oatmeal Layer
  • Combine flour, oats, sugar, nuts and salt in mixing bowl.
  • Cut in butter.
  • Reserve 2 cups of this mixture for topping.
  • Press remaining mixture into bottom of greased 9 x 9" pan.
  • Spread cooled date jam over the bottom layer and sprinkle reserved oatmeal mixture evenly over top.
  • Bake 25- 33 minute.
  • Cool completely then cut into squares.

Tips:

  • Use light or dark brown sugar, depending on your desired flavor profile. Light brown sugar will result in a milder flavor, while dark brown sugar will impart a more robust, molasses-like flavor.
  • If you don't have a food processor, you can chop the dates by hand. Just be sure to chop them very finely, so that they blend well into the batter.
  • Be careful not to overmix the batter. Overmixing can result in a tough, dense texture. Mix just until the ingredients are combined.
  • For a gooey, caramel-like filling, cook the date mixture for a few minutes longer. If you prefer a firmer filling, cook it for less time.
  • If you don't have any parchment paper, you can grease and flour the baking dish instead. Just be sure to coat the pan evenly, so that the squares don't stick.
  • Let the squares cool completely before cutting them. This will help to prevent them from falling apart.

Conclusion:

Brown sugar date squares are a delicious and easy-to-make treat that are perfect for any occasion. They are a great way to use up leftover dates, and they are also a good source of fiber and potassium. Whether you enjoy them as a snack, dessert, or breakfast treat, brown sugar date squares are sure to please everyone.
