BROWN SUGAR GLAZED PINEAPPLE BISCUITS RECIPE - (4.5/5)

Brown Sugar Glazed Pineapple Biscuits Recipe - (4.5/5) image

Provided by msippigrl

Number Of Ingredients 12

GLAZE:
1 cup self-rising flour
1 cup all-purpose flour
1 teaspoon baking powder
1/4 teaspoon ground cinnamon
2 tablespoons vegetable shortening (I used Crisco)
2 tablespoons unsalted butter
2/3 cup whole milk
1/2 cup chopped fresh pineapple, drained on paper towels
2 tablespoons unsalted butter
3 tablespoons light brown sugar, packed
Dash of salt, optional

Steps:

  • Preheat oven to 425° F. Line a baking sheet with foil or parchment paper. Melt the shortening and butter together in the microwave. Set aside. In a large mixing bowl, whisk together both the flours, baking powder, and cinnamon; add the melted mixture, milk, and pineapple, stirring just until combined. At this point, you can just drop dough by rounded tablespoons onto the baking sheet about 1" apart and bake for 13-15 minutes, or until tops are lightly browned. (OR) as I did.. I sifted a little flour over the top of the dough then used a spoon to pull the floured side against the side of the bowl so I could sift a little flour in the bottom of the bowl. Flour hands and pull off pieces of dough (or use a spoon) about the size of a small lemon, roll it around in your palms a few times, then place them on the baking sheet about 1" apart. Bake for 13-15 minutes, or until tops are lightly browned. Meanwhile, make the glaze.. Melt the butter in a small bowl in the microwave until fairly hot. Stir in brown sugar until thoroughly combined. Reheat for a few seconds to dissolve sugar, if needed. Spoon (or brush) the glaze over tops of hot biscuits. Serve warm.

Tips:

  • To achieve the perfect biscuit texture, ensure that the butter is cold and cut into small pieces. This will create pockets of steam during baking, resulting in flaky layers.
  • While mixing the dough, handle it as little as possible to prevent gluten from developing. Overworking the dough will result in tough biscuits.
  • Chill the dough for at least 30 minutes before rolling and cutting. This will make the dough easier to handle and prevent it from spreading too much in the oven.
  • When cutting the biscuits, use a sharp knife or biscuit cutter. A dull knife will tear the dough and create ragged edges.
  • Place the biscuits close together on the baking sheet. This will help them rise evenly and create a tender, flaky texture.
  • Brush the tops of the biscuits with melted butter before baking. This will give them a golden brown crust.
  • Bake the biscuits in a preheated oven. This will help them rise quickly and evenly.
  • For a sweeter glaze, add more brown sugar to the glaze mixture.
  • For a tangy glaze, add a squeeze of lemon juice or orange juice to the glaze mixture.
  • Serve the biscuits warm with your favorite toppings, such as butter, honey, or jam.

Conclusion:

These brown sugar glazed pineapple biscuits are a delicious and easy-to-make treat that can be enjoyed for breakfast, brunch, or dessert. With their flaky layers, sweet glaze, and pineapple chunks, these biscuits are sure to be a hit with everyone who tries them. So next time you're looking for a special treat, give these biscuits a try!
