Yield 2 servings

Number Of Ingredients 9

2 lemons
12 tablespoons unsalted butter
1 slice brioche bread, crusts removed and diced into 1/4-inch pieces (about 1/2 cup)
2 cod fillets, about 1/2-inch thick
Kosher salt and freshly ground black pepper
2 tablespoons canola oil
2 tablespoons capers
2 tablespoons white wine

Add the brioche, then reduce the heat to medium-low and cook, continually tossing and swirling the brioche until evenly toasted, about 4 minutes. Remove the croutons to a plate and let cool. Wipe out the pan.
  • Sprinkle the fish with salt and pepper. Heat the same pan over medium-high heat. Add 4 tablespoons butter and the oil and begin to cook over the heat, stirring. BROWN BUTTER PERCH

Brown Butter Perch image

I love perch. I love everything about them--the sweet, delicate flavor, the striking coloration, and the stubborn fight they put up for their size. The key here is getting the butter to a perfect nutty brown. Technically it's still butter, but something happens when it's toasted like this, and it really does become another ingredient altogether.

PAN-ROASTED FISH FILLETS WITH HERB BUTTER

Pan-Roasted Fish Fillets With Herb Butter image

A blast of heat in a cast-iron pan and a basting of golden butter does wonders for plain fish fillets. This life-changing method is adopted from a former chef and current fishmonger, Mark Usewicz of Mermaid's Garden in Brooklyn, who also teaches cooking classes in topics like "How to Cook Fish in a New York City Apartment." The cooking time is so short that the smell - which, if your fish is fresh and not funky, should not be overpowering - will dissipate quickly. And in the meantime, you have an easy dinner of tender fish with a toothsome crust, anointed with nutty, lemony brown butter and perfumed with herbs. You can use virtually any fish fillet, skin on or off, as long as it is not too thick. If the butter is browning too fast, reduce the heat and add a nut of cold butter to prevent scorching, or squeeze in the juice of half a lemon.

Time 20m

Yield 2 servings

Number Of Ingredients 7

2 5- to 6-ounce fish fillets, like black bass, haddock, fluke, striped bass, tilefish, snapper or salmon, 1/2- to 1-inch thick
Salt and ground black pepper
3 tablespoons grapeseed or canola oil
2 tablespoons unsalted butter
2 sprigs fresh thyme, tarragon, chives or another herb
1 tablespoon chopped flat-leaf parsley, optional
Lemon wedges

Steps:

  • Pat fillets dry with a paper towel. Season on both sides with salt and pepper.
  • Heat a heavy 10-inch nonstick or cast-iron skillet over high heat. When the pan is hot, add the oil. Place the fillets in the pan, skin side down (if applicable), laying them down away from your body. If fillets have skin, press down gently with a spatula for about 20 seconds to prevent curling.
  • Lower heat to medium and let sizzle until fish is golden and caramelized around edges, about 2 to 3 minutes. Carefully flip fillets and add butter and thyme to pan. Tilt pan slightly to let the melted butter pool at one end. Use a spoon to baste the fish with the pooled butter. Continue basting until golden all over and cooked through, 45 to 90 seconds more, depending on the thickness of your fish. Serve immediately with chopped parsley (if using) and lemon wedges.

SAUTéED SKATE WING

Sautéed Skate Wing image

Try this technique with any mild, flaky white fish, including sole, tilapia, or turbot, all of which work nicely with the sauce. Brown butter-or buerre noisette, created when butter is cooked until the milk solids turn golden brown-is one of those à la minute (cooked to order) sauces that should be a part of any home cook's repertoire, since it can be altered in countless ways. Nuts are classically paired with browned butter, as their flavors are complementary; citrus juice or wine balances the richness; and other ingredients, such as herbs, provide complexity. Since this recipe is so quick to prepare, you need to have your mise en place at the ready before you heat the pan. Toast and chop the hazelnuts, suprême the citrus, and put salt, pepper, and flour in separate dishes (for seasoning and dredging the fish) set near the stove.

Yield Serves 4

Number Of Ingredients 9

4 small skate wings, each cut into 2 equal pieces
Coarse salt and freshly ground pepper
1/2 cup wondra or all-purpose flour
1/4 cup sunflower or other neutral-tasting oil
4 tablespoons (1/2 stick) unsalted butter, cut into tablespoons
1/3 cup lightly toasted blanched hazelnuts, coarsely chopped
4 sprigs thyme
1 teaspoon fresh lemon juice
1 small pink grapefruit, suprêmed (page 34) and juice reserved (to yield 12 segments and 2 tablespoons juice)

Steps:

  • Dredge Heat a large sauté pan over medium-high heat as you season skate with salt and pepper and then dredge in flour, shaking off excess.
  • Sauté When pan is hot, add oil and heat until shimmering. Add skate pieces, working in batches to avoid crowding the pan, and sauté until fish is golden brown underneath, 1 1/2 to 2 minutes. Carefully turn pieces over with a fish spatula and reduce heat to medium. Cook until fish is uniformly opaque and browned on the other side, about 1 1/2 minutes more. Transfer to a plate and cover to keep warm.
  • Brown butter Wipe pan with paper towels and set over medium-low heat. Drop butter pieces into pan and swirl constantly (to cook evenly) until butter is melted and golden brown, 30 to 60 seconds. Stir in thyme and citrus juices; the butter will spatter a bit. Add hazelnuts, then remove from heat.
  • Serve Divide skate pieces among plates, arrange three grapefruit segments over each serving, and drizzle evenly with hazelnut brown butter. Serve immediately.
  • Skate is a type of ray fish, with flat pectoral fins (called wings) that give it a batlike appearance. The wings are the most desirable part of the fish, with a delicate, flaky texture. They are most commonly sautéed and served with brown butter and capers.

Tips:

  • Choosing the Right Fish: Select a firm-fleshed fish like cod, haddock, salmon, or halibut that can withstand the heat of sautéing without breaking apart.
  • Preparing the Fish: Before cooking, pat the fish dry with paper towels to remove excess moisture, which helps achieve a crispy sear.
  • Seasoning the Fish: Generously season the fish with salt and pepper, or use a blend of your favorite spices, to enhance its flavor.
  • Using the Right Butter: Unsalted butter is the best choice for sautéing fish as it allows you to control the level of saltiness. Clarified butter can also be used for a richer flavor and higher smoke point.
  • Browning the Butter: Keep a close eye on the butter as it browns, as it can quickly go from golden brown to burnt. Swirl the pan or spoon the butter over the fish to evenly distribute the browned bits.
  • Cooking the Fish: Sauté the fish in the browned butter over medium heat until it is cooked through. The cooking time will vary depending on the thickness of the fish fillets or steaks.
  • Finishing Touches: Garnish the sautéed fish with fresh herbs like parsley, dill, or chives for an extra pop of flavor and color.

Conclusion:

Browned butter sautéed fish is a classic dish that combines the delicate flavors of fish with the rich, nutty taste of browned butter. By following these tips, you can create a delicious and impressive meal that is sure to be enjoyed by all.
