1 cup unbleached all-purpose flour
1/4 cup Dutch-process cocoa powder
1 teaspoon baking powder
1/2 teaspoon kosher salt (we use Diamond Crystal)
6 ounces semisweet chocolate, such as Baker's, chopped (1 1/2 cups)
1/2 cup vegetable shortening, melted
1 teaspoon pure vanilla paste or extract
2 large eggs
2/3 cup packed light-brown sugar
1/3 cup granulated sugar
Flaky sea salt, such as Jacobsen, for sprinkling
2 pints assorted ice cream, such as pistachio, caramel, chocolate, and berry swirl

Steps:

  • Preheat oven to 350°F, with racks in upper and lower thirds. Line 2 baking sheets with parchment. In a bowl, whisk together flour, cocoa, baking powder, and kosher salt. Melt chocolate in a heatproof bowl set over (but not in) a pot of simmering water, or in the microwave, stirring every 10 seconds.
  • Stir in shortening and vanilla to combine. Beat eggs with both sugars on medium-high speed until pale, fluffy, and doubled in volume, about 5 minutes. Gently fold in flour and chocolate mixtures, alternating in two additions each, just to combine (do not overmix).
  • Scoop 1-ounce (2-tablespoon) balls of dough; transfer to prepared sheets, spaced 2 inches apart. Sprinkle tops with flaky salt. Bake, rotating sheets and rack positions halfway through, until cookies spread and dome, with small cracks beginning to form on tops, 8 to 10 minutes. Let cool on sheets on wire racks 5 minutes, then transfer cookies to racks and let cool completely.
  • Meanwhile, temper ice cream in refrigerator until softened but not melting, about 20 minutes. Sandwich 1/4 cup ice cream between 2 cookies; repeat with remaining ice cream and cookies. Freeze until ice cream is firm, at least 1 hour, then transfer to a freezer bag to store up to 1 week.

Water, vegetable oil and egg called for on brownie mix box
1 pint vanilla ice cream, slightly softened
Assorted sprinkles and miniature chocolate chips, as desired

Steps:

  • Heat oven to 350°F (325°F for dark or nonstick pan). Line 9-inch square pan with foil, allowing some to hang over edges of pan. Grease bottom and sides of foil with shortening or cooking spray. Make and bake brownies as directed on box. Cool completely on cooling rack, about 1 1/2 hours.
  • Place pan of brownies in freezer 30 minutes. Using foil to lift, remove brownies from pan, and peel foil away. Cut brownies into 4 rows by 4 rows.

Vegetable-oil cooking spray
2 cups all-purpose flour
1 1/2 teaspoons baking powder
1 1/2 teaspoons salt
11 ounces (2 sticks plus 6 tablespoons) unsalted butter, room temperature
7 ounces unsweetened chocolate
2 2/3 cups sugar
4 large eggs
2 teaspoons pure vanilla extract
Peanut Butter Ice Cream

Steps:

  • Preheat oven to 350 degrees. Coat two 13- by-18-inch rimmed baking sheets with cooking spray, line with parchment, and spray parchment.
  • Whisk flour, baking powder, and salt in a medium bowl. Melt butter and chocolate in a large heatproof bowl set over a pot of simmering water, stirring until smooth. Remove from heat, add sugar, and stir until dissolved. Stir in eggs, 1 at a time, and then stir in vanilla. Stir in flour mixture until just incorporated. (Do not overmix.)
  • Divide batter between pans. Use an offset spatula to spread batter into thin, even layers. Bake, rotating pans once, until batter just begins to set, 8 to 10 minutes. (The surfaces will look dry, and testers inserted in the centers will come out wet.) Let cool completely in pans on wire racks.
  • To assemble, place the flat side of a large wire rack over 1 brownie, and invert rack, brownie, and pan together. Remove pan and parchment. Repeat with remaining brownie. Place a clean rimmed baking sheet over 1 brownie, and invert pan, brownie, and rack together. Remove rack. The brownie should be in the pan, top side up.
  • Spread ice cream in a smooth, even layer over brownie in pan. Align pan lengthwise with remaining brownie on rack, and use rack to quickly and carefully flip brownie onto ice cream. Remove rack. Press top brownie gently. Cover and freeze until firm, at least overnight (or up to 1 week).
  • Uncover, and cut into squares. Serve immediately (or cover and freeze ice cream sandwiches overnight).

  • Heat oven to 350°F (325°F for dark or nonstick pan). Place foil baking cup in each of 12 regular-size muffin cups.

two boxes family-style dark chocolate fudge brownie mix, 19 ounces each
six large eggs
1 cup oil
2 teaspoons vanilla extract
3 quarts vanilla ice cream, slightly softened

Steps:

  • 1. preheat oven to 350°. Line two 15 x 10" baking pans with nonstick foil, leaving 2 inch overhang on each short end.
  • 2. Prepare each box of brownie mix separately using three eggs, 1/2 cup oil, 1/4 cup water, and 1 teaspoon vanilla.
  • 3. Spread mixture evenly into prepared pans. Bake 25 minutes or until toothpick inserted in center's comes out clean. Cool completely.
  • 4. Lifting foil by ends, place brownies on baking sheet. Cover. Brownies can be stacked with foil in between. Refrigerate or store at room temperature until ready to assemble sandwiches.
  • 5. line 1 baking pan with nonstick foil. Scoop ice cream into pan, spreading evenly. Freeze three hours or overnight, until firm
