It is delicious picnic fare when served with country ribs, coleslaw or potato salad. 1 pound bone-in pork loin chops
2 bone-in chicken breast halves, skin removed
1 pound beef top round steak, cut into bite-size pieces
6 cups water
2 cans (14-1/2 ounces each) diced tomatoes, undrained
2 cups chopped onion
1 can (8 ounces) tomato sauce
1/2 cup cider vinegar
1/4 cup sugar
4 to 5 garlic cloves, minced
2 teaspoons hot pepper sauce
2 cans (15-1/4 ounces each) whole kernel corn, drained
2 cans (14-3/4 ounces each) cream-style corn
1 cup dry bread crumbs, toasted
Salt and pepper to taste
Minced fresh parsley, optional

Steps:

  • Place the pork chops, chicken and round steak in a large Dutch oven; cover with water. Cover and cook for 1-1/2 hours or until meat is tender. , Strain stock into another large kettle; refrigerate overnight. Remove bones from meat; dice and place in a separate bowl. Cover and refrigerate overnight. , The next day, skim fat from stock. Add the tomatoes, onion, tomato sauce, vinegar, sugar, garlic and pepper sauce. Simmer, uncovered, for 45 minutes. , Add the kernel corn, cream-style corn and reserved meat; heat through. Stir in bread crumbs; season with salt and pepper.

Folks moving to this part of the country (Georgia) often fall in love with Brunswick Stew, usually a side dish at barbecue restaurants. This version is delicious but simple to make. People feud over whether the stew should have potatoes and lima beans in it, but this is a purist stew (except for the sneaky addition of potato flakes).

1 onion, finely chopped
2 garlic cloves, crushed and chopped
2 lbs ground pork (chopped pork barbecue works well)
1 lb ground chicken
12 ounces diced tomatoes
2 (15 ounce) cans creamed corn
1 (15 ounce) can tomato sauce
1 (15 ounce) can water
1/8 cup mustard
1/4 cup barbecue sauce
1 tablespoon vegetable oil
1/4 cup Worcestershire sauce
2 tablespoons instant potato flakes
salt
fresh ground pepper
Tabasco sauce

Steps:

  • Cook onion and garlic in oil until the onion is transparent. Add the meat and brown.
  • Drain and add all other ingredients except potato flakes. Cook for 30 minutes over low heat, stirring often.
  • Add potato flakes (more or less than the amount listed)to thicken to desired consistency. Add salt, pepper and tabasco to taste.

This recipe was developed when we bought a 14-quart potjie (cast iron pot with legs) for outdoor cooking. If you don't have a local barbecue joint to buy the barbecue, you can cook a small pork loin or country style pork ribs in your crockpot with a little water, barbecue it in your oven, then shred to use for this recipe. However, we have found it is easier and quicker to just buy it. We use Carolina Treet barbecue sauce to give it some kick. Serve with cornbread or saltines.

1 lb take-out barbecued pork
1 whole broiler-fryer chicken
2 (28 ounce) cans diced tomatoes, with juice
1 (2 quart) can V8 vegetable juice
2 (15 ounce) cans lima beans (can use frozen)
1 (15 ounce) can green beans
1 (15 ounce) can corn
1 (15 ounce) can white shoepeg corn
3 -4 carrots, peeled & diced
3 -4 medium potatoes, peeled & diced (yukon gold works well)
1 -2 medium onion, peeled & diced
2 garlic cloves, peeled & crushed
1 tablespoon salt, to taste
1 tablespoon black pepper, to taste
1 teaspoon red pepper, to taste
1 teaspoon hot sauce, to taste
2 -3 bay leaves
water
1 cup carolina treet barbecue sauce (to taste)

Steps:

  • Put a 14-quart cast iron pot on outdoor gas flame (be sure it is secure and won't tip over and that children are kept away).
  • Put in about 1 gallon of water, whole chicken (discard giblets) and bay leaves and bring to a boil.
  • Let boil 30 minutes or until the chicken is done.
  • When the chicken is done, remove it from the pot, leaving the broth boiling, and set it aside to cool.
  • Add all vegetables and barbecued pork to the chicken broth remaining in the pot.
  • Debone and shred the chicken meat and add to the pot.
  • Add enough V-8 juice to get the desired consistency.
  • Add garlic and seasonings.
  • Cook on high simmer/low boil for 1-2 hours, stirring occasionally to keep vegetables from settling to the bottom of the pot.
  • Taste before serving and add additional seasoning if necessary.

1 large onion, chopped
2 (16.5 ounce) cans cream-style corn

This is the original recipe for Brunswick Stew created in Brunswick, GA. It is an all day project to make this stew but very worth the time and effort.

3 lb whole chicken
1 lb lean pork
1 lb lean beef roast
3 medium onions, chopped
4 can(s) 16 oz. tomatoes
5 Tbsp worcestershire sauce
1 1/2 bottle 14 oz ketsup
1 Tbsp tobasco sauce
2 bay leaves
1/2 bottle 12 bottle of chili sauce
1/2 tsp dry mustard
1/2 stick butter
3 Tbsp vinegar
2 can(s) 16 oz cans baby butter beans or baby lima beans
2 can(s) 16 oz. cans creamed corn
1 can(s) small english or sweet peas
3 diced potatoes
1 box cut okra

Steps:

  • 1. Place meat in large heavy pot. Season with salt and pepper. Add onions and cover with water. Simmer until meat falls from the bones (several hours). Allow meat to cool, shred then return to pot with stock. Add next 8 indredients to pot and simmer for one hour. Stir occasionally to keep from sticking to bottom of the pot. Be careful that you don't scorch the bottom. Add next 6 indredients. Cook slowly (simmer on low) until stew becomes thick.
  • 2. This stew is great served with cornbread or barbeque and seafood.

1 3/4 cups Catsup
1/4 cup Guldens Mustard
1/4 cup white vinegar
Blend until smooth, then add:
1 tablespoon chopped garlic
1 teaspoon coarse ground black pepper
1 teaspoon crushed red pepper (more if you like a bit of heat)
1/2 oz. Liquid Smoke
1 oz. Worcestershire Sauce
1 oz. Crystal Hot Sauce or 1/2 oz. Tabasco (more if you like a little more bite)
1/2 tablespoon fresh lemon juice
Blend until smooth, then add:
1/4 cup dark brown sugar
Stir constantly, increase heat to simmer (DO NOT BOIL) for approx. 10 minutes.
Makes approx. 3 1/2 cups of sauce (set aside - to be added later).

1 pound Boston butt pork roast
1 pound fresh chicken or hen, bone in
1 pound boneless beef chuck roast
1 pound red potatoes, peeled and quartered
2 1/2 teaspoons ground black pepper
1/8 teaspoon ground cayenne pepper
1 small sweet onion, such as Vidalia, chopped
6 cups canned whole peeled tomatoes
3/4 cup ketchup
2 tablespoons Worcestershire sauce
2 1/2 teaspoons salt
32 ounces (4 cups) cream-style white corn

Steps:

  • Place the pork and chicken in a 1 1/2 gallon stock pot with enough water to cover. Cook at a medium simmer for 2 hours, or until the meat is very tender, skimming occasionally. Remove the meat to a bowl and reserve the stock. Meanwhile, in a separate large stockpot, do the same to the beef. Remove the beef and discard the broth.
  • Place the potatoes in a medium saucepan, cover with water and simmer until tender.
  • Remove and discard the bones and skin from all of the cooked meat, pull apart or cut into chunks and process in a food processor or meat grinder until ground. Put 2 pints of the reserved pork and chicken stock into a 1 1/2 gallon stock pot, reserve the rest for another use. Add the ground meats to the stock. Dissolve the black pepper and the cayenne pepper in 1 tablespoon water, and add to the stew.
  • Add to the onion and tomato to the food processor, process well and add it to the meat mixture with the ketchup and Worcestershire sauce. Process in the food processor the cooked potatoes, then add to the stew, stirring until any lumps are removed. Stir in the salt. At this point, the stew should be soupy not watery. If the stew is too thick to stir easily with a flat spatula or pancake turner, thin it slightly with more reserved pork and chicken stock. Cook for 30 minutes, stirring constantly.
  • Puree and add the corn, then continue to cook the stew over very low heat for 1 hour, stirring often and scraping the bottom of the stock pot with a flat spatula or pancake turner to avoid scorching.

¾ cup shredded cooked pork, or to taste

Steps:

  • Combine tomatoes, potatoes, chicken broth, onion, Worcestershire sauce, vinegar, ketchup, and red pepper flakes in the pot of a multi-functional pressure cooker (such as Instant Pot®). Lay chicken breasts on top; add seasoned salt, thyme, and black pepper. Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 20 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove lid.
  • Remove chicken from pot and set on a plate to cool. Place corn, lima beans, and okra into the pot and stir to combine.
  • Remove skin from chicken, shred the meat off the bones, and return to the pot. Add pork. Seal cooker; select low pressure and cook until vegetables are heated through, about 15 minutes. Release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove lid.

If you are a brunswick stew lover like I am, then you probably won't be disappointed with this church recipe. It has a very nice red color that comes from the tomato products. Bethel Church has used it every year for more than 25 years. A quart sells for about $4 in 1997 dollars. A quart is two adult servings. Bethel Church's brunswick stew is the best I've had, and I've tried a lot of them. It is very similar to the brunswick stew served at Bullock's Bar-B-Cue.

3 lbs cooked chuck roast (Manco 6 lb cans, 7 total cans) or 3 lbs canned cubed beef (Manco 6 lb cans, 7 total cans)
3/4 lb pork such as boston butt
1 chickens boiled deboned, reuse broth
1 1/2 lbs chopped onions
105 ounces tomato juice
96 ounces canned tomatoes
1 1/2 quarts lima beans (butterbeans preferred)
1 1/2 quarts corn (frozen or canned)
9 lbs skinned potatoes (11 gallons is about 125 lb)
1 lb margarine or 1 lb butter
19 ounces tomato puree
9 5/8 ounces tomato ketchup (prefer Heinz)
3 ounces Worcestershire sauce
2 1/2 ounces cider vinegar
2 ounces texas pete, sauce
3 1/2 ounces white sugar
salt
pepper

Steps:

  • Use tight-fitting cookware to hold in the flavor as the ingredients are boiled separately. Cook everything in separate pots and put them together at the end.
  • Start out by slowly boiling the meats until they are tender. Remove the bones and skins from the chickens. Re-use the broths to boil potatoes and butter beans. Then cook the onions and corn in reserved broth. Do not add any of the tomato products during the initial cooking process.
  • When all of the ingredients are cooked, add them together in one big pot. Add all of the remaining ingredients and mix them well. Bring the pot to a boil and continue stirring with a wooden spoon or a boat oar to keep it from sticking to the pot and burning.
  • An appetizing presentation is made to the general public with someone stirring a large cauldron mounted to a tripod over an open fire. Stir the stew for approximately one hour over the fire as it continues to get thicker with the water boiling off of it. This step is very important, the stew must be boiled down until it is quite thick.
  • Serve stew with a mayonnaise based slaw and saltine crackers. It is best during the colder months of the year. Brunswick stew freezes well.

2 potatoes, diced
1 onion, chopped
1 (15 ounce) can peas, drained
1 (15.25 ounce) can whole kernel corn, with liquid

3 teaspoons salt, or to taste

Steps:

  • Bring water to boil in a saucepan; add potatoes, and boil until tender ( about 15 minutes).
  • Pour the potatoes and the water used to boil them into a large pot. Stir in onion, peas, corn, tomatoes, ground turkey, and bacon. Bring to a boil. Cover, reduce heat to medium-low, and simmer for 2 hours, stirring occasionally.
  • Stir in the salt, pepper, garlic salt, and sugar. If stew appears too watery, stir together flour and some of the stew liquid in a small cup, and then stir mixture into the stew. Continue cooking for 1 hour.

3 cups chicken stock or 3 cups chicken broth
2 -3 cups shredded cooked chicken
1 (24 ounce) container shredded barbecued pork
1 (16 ounce) package frozen vegetable gumbo

1/2 cup ketchup
3 -4 tablespoons apple cider vinegar

Cold Slaw is usually served with the barbecue along with hush puppies and baked beans. One of the largest such events in the state is in Charlotte, NC. In addition to the aforementioned menu items, this group serves Brunswick Stew with the meal. It is not unusual for this event to be attended by 7-10 thousand hungry patrons. There are hundreds of recipes for this delicious stew, with each cook insisting that hers is the original and best of all. The following recipe is the one that is used for the Mallard Creek barbecue, and this cook thinks that IT is the BEST! The taste is well worth the time for preparation. The stew is not "beautiful" but one forgets that quickly when it is tasted!

1 (5 lb) stewing chicken
4 lbs beef roast
1 1/2 lbs lean pork
1 1/4 cups rice, uncooked
1 (1 lb) can creamed corn
3 quarts canned tomatoes

Steps:

  • Put chicken, beef and pork in very large pot and cover with water.
  • Bring to boiling point, reduce heat and simmer until meats are tender.
  • Remove any bones and grind meat in food processor or on coarse blade of food chopper.
  • Remove any foam from cooking liquid or strain through cheese cloth.
  • Cook rice in strained liquid for 30 minutes, stirring frequently to prevent sticking.
  • Add corn, tomatoes and butter and cook for an additional 30 minutes.
  • Add ground meat and seasonings as desired and cook for an additional 20 minutes.
  • Add water or canned chicken broth if mixture is too thick.
  • Serve with cornbread.
  • This is a very hearty stew and does not need additional menu items.
  • The stew can be frozen--will yield about 20 pints for freezer.

6 boneless skinless chicken breast halves
2 (15 ounce) cans creamed corn
1 (28 ounce) can crushed tomatoes
1 (12 ounce) jar chili sauce

1/4 cup Worcestershire sauce
3 tablespoons butter or 3 tablespoons margarine, cut up
2 tablespoons cider vinegar
2 teaspoons mustard powder
1/2 teaspoon salt

1/2 teaspoon hot pepper sauce (such as Tabasco)

Steps:

  • Place chopped onion in a 4-qt. slow cooker. Cut each chicken breast in half and place over onion.
  • Add corn and remaining ingredients. Cook on high for 4 hours or until chicken is tender. Remove chicken, shred with a fork, and return the meat back to the stew. Enjoy!
  • A lot of times I will cook a whole chicken and assemble the stew as directed, using the already cooked meat. If you try this, reduce the heat to low and just let it simmer in the crock pot for a couple of hours.
