If there are kids in the kitchen who want to help out, you can ditch the knives for this easy appetizer; just rip the tomatoes and basil with your hands. The tomato mixture can also be tossed with pasta to make a fresh sauce. From the book "Lucinda's Rustic Italian Kitchen," by Lucinda Scala Quinn (Wiley).

Got this recipe from Guy's Big Bite. One of the best I've had. I didn't have baguette so I use a ciabata. Just as good.

Number Of Ingredients 9

8 seeded, chopped roma (plum) tomatoes
5 leaves chopped fresh basil
2 cloves minced garlic
1 pinch dried oregano
1 dash crushed red pepper
1 pinch salt
1 pinch ground black pepper
1 tablespoon olive oil
1 (1 pound) loaf French or Italian-style bread

Steps:

  • In a mixing bowl, combine the tomatoes, basil, garlic, oregano, red pepper, salt, pepper and olive oil. Use more olive oil, if necessary, to coat the entire mixture. Allow the mixture to sit for 10 minutes.
  • Slice the bread. On a baking sheet, arrange the slices in a single layer. Brown both sides of the bread slightly in the oven. Remove the slices from the oven. Spread the tomato mixture on the slices. Broil 2 to 3 minutes, or until the mixture is hot but not cooked.

Tips:

  • Choose the right tomatoes: Use ripe, flavorful tomatoes for the best results. Look for tomatoes that are deep red in color and have a sweet, juicy aroma.
  • Use fresh basil: Fresh basil is essential for a classic bruschetta pomodoro. If you don't have fresh basil, you can substitute dried basil, but it won't be as flavorful.
  • Toast the bread: Toasting the bread gives it a nice crispy texture that contrasts well with the soft, juicy tomatoes.
  • Use good quality olive oil: A good quality olive oil will add flavor and richness to the bruschetta. Look for an extra virgin olive oil that has a fruity, peppery taste.
  • Season the tomatoes: Season the tomatoes with salt, pepper, and a pinch of sugar to enhance their flavor.
  • Don't overcrowd the bread: When assembling the bruschetta, don't overcrowd the bread with toppings. You want to be able to taste all of the flavors.
  • Serve immediately: Bruschetta is best served immediately after it is made. The bread will start to get soggy if it sits for too long.

Conclusion:

Bruschetta pomodoro is a delicious and easy-to-make appetizer that is perfect for any occasion. With just a few simple ingredients, you can create a dish that is both flavorful and impressive. So next time you're looking for a quick and easy snack or appetizer, give bruschetta pomodoro a try. You won't be disappointed!
