3 tablespoons olive oil, divided
3 shallots, minced
3 garlic cloves, minced
2 cups plus 2 tablespoons water, divided
1 cup quinoa, rinsed
1 cup fresh Brussels sprouts
1/2 cup dried cranberries
1/2 cup chopped walnuts, toasted
2 tablespoons chopped fresh parsley
1/4 cup lemon juice
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • In a small saucepan, heat 1 tablespoon olive oil over medium heat. Add shallots; cook and stir 3 minutes. Add garlic; cook 1 minute longer. Remove., In same saucepan, bring 2 cups water to a boil. Add quinoa. Reduce heat; simmer, covered, until liquid is absorbed, 12-15 minutes. Remove from heat; fluff with a fork. ⅓ cup neutral oil, such as canola or avocado oil
5 cups brussels sprouts, thinly sliced
½ teaspoon kosher salt, plus more to taste
½ teaspoon black pepper, freshly ground, plus more to taste
2 cups quinoa, cooked, warm
½ cup craisins
½ cup toasted pecans, roughly chopped
½ cup parmesan cheese, shaved, plus more for serving
