BRUSSELS SPROUTS WITH BUTTER AND CARAWAY

Brussels Sprouts with Butter and Caraway image

I love sprouts and this is a really good way to have them rather than just plain. Goes great with meat and potatoes.

Provided by Tara1183

Categories     Vegetable

Time 20m

Yield 5 serving(s)

Number Of Ingredients 7

3 cups Brussels sprouts (can use frozen or fresh)
1/2 cup chicken stock
1/4 teaspoon salt
1/4 teaspoon pepper
1 1/2 tablespoons butter
1/8 teaspoon caraway seed
1/2 tablespoon lemon juice

Steps:

  • Combine sprouts, stock, salt and pepper in saucepan, cover, bring to a boil and simmer til tender.
  • Melt butter in microwave cup, add caraway seed and lemon, pour over sprouts and serve.

Tips:

  • Choose fresh Brussels sprouts: Look for sprouts that are firm and have tightly closed leaves. Avoid any sprouts that are wilted or have yellow or brown spots.
  • Trim the Brussels sprouts: Cut off the stem end of each sprout and remove any loose or damaged leaves.
  • Blanch the Brussels sprouts (optional): Blanching helps to brighten the color of the sprouts and remove some of their bitterness. To blanch, bring a large pot of salted water to a boil. Add the Brussels sprouts and cook for 2-3 minutes, or until they are tender-crisp. Drain the sprouts and immediately transfer them to a bowl of ice water to stop the cooking process.
  • Slice the apples: Use a sharp knife to slice the apples into thin wedges. You can peel the apples first, if desired.
  • Toast the caraway seeds: Toasting the caraway seeds will bring out their flavor. Heat a small skillet over medium heat and add the caraway seeds. Cook, stirring constantly, for 2-3 minutes, or until the seeds are fragrant and slightly browned.
  • Make the mustard dressing: Whisk together the Dijon mustard, olive oil, vinegar, honey, and salt and pepper to taste. You can also add a little bit of water to thin the dressing, if desired.
  • Assemble the salad: In a large bowl, combine the Brussels sprouts, apples, caraway seeds, and mustard dressing. Toss to coat. Serve immediately or chill for later.

Conclusion:

This Brussels sprouts salad with mustard, apples, and caraway is a delicious and healthy side dish that is perfect for any occasion. The Brussels sprouts are roasted until tender and slightly caramelized, and the apples and caraway seeds add a sweet and nutty flavor. The mustard dressing is tangy and flavorful, and it ties all of the ingredients together perfectly. This salad is sure to be a hit with your family and friends!
