GRILLED STRAWBERRY SHORTCAKE

Provided by Katie Lee Biegel

Categories     dessert

Time 30m

Yield 4 servings

Number Of Ingredients 8

2 tablespoons vegetable oil
20 strawberries, hulled
Four 3- to 4-inch-thick slices cut from a store-bought angel food cake
1 cup heavy whipping cream
8 ounces mascarpone
2 tablespoons confectioners' sugar
2 tablespoons store-bought balsamic glaze
4 sprigs fresh mint

Steps:

  • Heat a grill to medium-high heat or place a grill pan on the stove over medium-high heat. Generously grease the grill grates with the vegetable oil. Slide 5 strawberries on a skewer, pushing the skewer through the cores. Repeat this process to assemble 3 more skewers. Place the skewers on the grill and cook, turning as needed, until dark grill marks are created, 3 to 4 minutes per side. Remove half the strawberries from the skewers to a large bowl and use a fork to mash them. Stir in the remaining strawberries and set aside.
  • Grill the cake slices until they have grill marks, 30 to 45 seconds per side (do not let the cake slices cook for more than 1 minute or they will start to stick).
  • Combine the whipping cream, mascarpone and confectioners' sugar in the bowl of an electric mixer. Whip until stiff peaks form, about 4 minutes. Plate the cakes individually and top each with some strawberries. Drizzle the balsamic glaze over the berries. Dollop the whipped cream on top and garnish each plate with a sprig of fresh mint. Serve immediately.

Time 1h45m

Yield 4 to 6 servings

Number Of Ingredients 13

1 cup cake flour
1/4 cup cocoa powder
1 teaspoon baking soda
1 teaspoon espresso powder
1/2 teaspoon kosher salt
1 1/2 cups sugar
1 ounce bittersweet chocolate, finely grated, plus more for sprinkling
12 large egg whites, at room temperature
1 teaspoon cream of tartar
1 teaspoon vanilla extract
2 tablespoons butter, melted, for grilling
2 cups mixed fresh berries, for serving
1 cup whipped cream, for serving

Steps:

  • Preheat the oven to 350 degrees F.
  • Sift the flour, cocoa powder, baking soda, espresso powder, salt and 3/4 cup sugar into a large bowl. Whisk in the chocolate and set aside.
  • Add the egg whites and cream of tartar to the bowl of a stand mixer fitted with the whisk attachment. Whip the whites on medium-high speed until foamy, about 30 seconds. Slowly pour in the remaining 3/4 cup sugar and whip on high speed until the whites are glossy and can hold a stiff peak. Add the vanilla and beat to combine. Remove the bowl from the mixer.
  • Gradually add the flour mixture, gently folding it into the egg white mixture, until fully combined. Spoon the batter into an ungreased 10-inch tube pan and bake until the cake springs back when pressed with a finger, 30 to 35 minutes. Do not open the oven during this time. Let cool, inverted, for 1 hour before removing the cake from the pan.
  • To grill the cake: Preheat an outdoor grill or grill pan over medium-high heat. Slice the cake and brush both sides of each slice lightly with the butter. Grill the cake slices until the surface becomes lightly caramelized and grill marked, about 1 minute per side. Serve with the berries, a dollop of whipped cream and a sprinkling of grated chocolate.

Tips:

  • For the best results, use a high-quality angel food cake mix. A good mix will be light and fluffy, and it will have a fine crumb.
  • Be sure to preheat your grill to the correct temperature before cooking the cake. If the grill is too hot, the cake will burn. If the grill is too cold, the cake will not cook properly.
  • Use a grill pan or a baking sheet to cook the cake. This will help to prevent the cake from sticking to the grill grates.
  • Cook the cake for the recommended amount of time, but keep an eye on it to make sure that it does not overcook. Overcooked cake will be dry and crumbly.
  • Let the cake cool completely before frosting it. This will help to prevent the frosting from melting.
  • For a special touch, serve the cake with fresh strawberries, whipped cream, or ice cream.

Grilled angel food cake is a delicious and easy-to-make dessert that is perfect for any occasion.
