Categories     Bean     Bake     Low Fat

Yield 6 servings

Number Of Ingredients 6

6 low fat wraps 8" in diameter
1 can black beans or fat free refried beans
2.5 cups low fat spaghetti sauce
1 cup salsa
2 cups grated zucchini
2 cups low fat cheese (optional)

Steps:

  • Put 1/3 cup sauce in the bottom of an 8" diameter baking dish Combine remaining sauce with salsa Put one wrap in the baking dish Top with sauce, beans, zucchini and cheese. Continue to layer in this manner ending with sauce. Cover and bake at 350 degrees for 45 minutes.

Tips:

  • Choose the right tortillas: For a soft and pliable burrito bake, use large burrito tortillas made with white or whole wheat flour. Ensure they're fresh and can be folded without cracking.
  • Use a variety of fillings: The beauty of a burrito bake lies in its versatility. Experiment with different fillings like seasoned ground beef, shredded chicken, or sautéed vegetables. Beans, corn, and rice are also popular options.
  • Don't overfill the tortillas: While it's tempting to pack in as many fillings as possible, resist the urge. Overstuffed burritos will be difficult to roll and may fall apart during baking.
  • Layer the fillings evenly: To ensure even cooking and a cohesive bake, distribute the fillings evenly across the tortillas. This will prevent any one ingredient from dominating the dish.
  • Use a flavorful sauce: A flavorful sauce adds moisture and richness to the burrito bake. Choose a sauce that complements your chosen fillings, such as a spicy enchilada sauce or a creamy tomatillo sauce.
  • Bake until golden brown: The ideal burrito bake should have a golden brown exterior and a hot, bubbly interior. Bake the burritos for the recommended time in the recipe, or until the cheese has melted and the sauce is slightly caramelized.
  • Serve with your favorite toppings: Once the burrito bake is ready, let it cool slightly before slicing and serving. Offer a variety of toppings such as sour cream, guacamole, salsa, diced tomatoes, and shredded lettuce for a customizable dining experience.

Conclusion:

A burrito bake is a versatile and satisfying dish that combines the flavors and textures of Mexican cuisine into one delicious casserole. With its customizable fillings, flavorful sauces, and a crispy golden crust, it's a perfect meal for busy weeknights or casual gatherings. Whether you prefer a classic beef burrito bake or a vegetarian version packed with colorful veggies, this dish is sure to become a family favorite.
