BUSY DAY CHICKEN RICE CASSEROLE

This is my family's favorite one dish meal - mine too, since it is so easy to put together! I use skinless, boneless chicken breasts but mixed chicken pieces can be used, too. I also use the low fat, low sodium canned soups and the taste is still great!

Tips:

  • Use day-old rice. This will help the rice to hold its shape and not become mushy in the casserole.
  • Cook the chicken thoroughly. Chicken should be cooked to an internal temperature of 165 degrees Fahrenheit.
  • Don't skimp on the vegetables. Vegetables add flavor, texture, and nutrients to the casserole.
  • Use a flavorful cheese. A sharp cheddar or Parmesan cheese will add a lot of flavor to the casserole.
  • Don't overcook the casserole. The casserole is done when the cheese is melted and bubbly and the chicken is cooked through.
