Tips:

  • For the freshest and most flavorful oysters, purchase live oysters from a reputable seafood market. Ensure that the oysters are tightly closed and have a briny smell.
  • Before cooking, thoroughly clean the oysters by scrubbing their shells with a stiff brush and rinsing them under cold water.
  • To shuck the oysters, carefully insert an oyster knife into the hinge of the shell and twist it until the shell pops open. Remove the top shell and loosen the oyster from the bottom shell with the knife.
  • To make the batter, whisk together all-purpose flour, cornstarch, baking powder, salt, and pepper in a bowl. In a separate bowl, whisk together buttermilk, eggs, and hot sauce.
  • Heat a large skillet over medium-high heat and add butter. Once the butter is melted and foamy, dip each oyster in the batter and fry it in the hot butter until golden brown on both sides.
  • Serve the fried oysters immediately with your favorite dipping sauce, such as tartar sauce, cocktail sauce, or remoulade.
