A BETTER BUTTERBEER RECIPE WITH OR WITHOUT ALCOHOL
Steps:
- Gather the ingredients.
- In a small bowl, combine the cream, spices, butterscotch, and softened butter.
- Whisk for 2 minutes to mix. Avoid whipping it so long that it becomes whipped cream , but it should thicken and increase in volume slightly.
- Place the bowl in the freezer for 15 minutes to give it a good chill. If not making butterbeer immediately, cover the bowl and store in the refrigerator for at least 2 hours.
- Fill a frosty glass about two-thirds full with cold vanilla cream soda.
- Pour the chilled butterbeer batter over the back of a spoon and into the glass. It will naturally rise to the top and float on the soda. Make this layer as thick as you like, but go slow because it will grow fast.
- Serve it with a straw or drink it straight from the glass (and experience the foamy mustache). Enjoy.

MATER'S ADULT BUTTERBEER
I've tried a couple of butterbeer recipes I found online, and they all were either so sweet they made me sick or they had oily butter in them that made me sick. I opted for a simplified version that tasted a little bit like less-sickly butterscotch and was strong enough to slightly inebriate something larger than a house elf. Great for Harry Potter-themed parties or Halloween. Served super-chilled in a frosted mug, it can magically warm up even the coldest wizards.

- Add schnapps.
- Add soda.

- I used ounce measurement because this site doesn't accept "parts" as a valid measure. But basically, it's equal parts vodka and schnapps to half as much soda. You can adjust the soda for a less strong version.

- Carefully mix just before serving, adding the butterscotch flavoring to the soda then stirring gently to mix well, or the fizz will dissipate too soon.
- To keep butterbeer on hand, pour 1 cup cream soda out of the 2-liter bottle, quickly add 1 cup butterscotch flavoring, and recap the bottle.Completely sugar-free and alcohol-free!
