Steps:
- Preheat oven to 350°F. Generously brush a 3-quart baking dish with butter. Prepare a bowl of salted ice water. Cook green beans in a large pot of generously salted boiling water until crisp-tender and dark green, 3 to 4 minutes. Drain; immediately transfer to ice water until thoroughly chilled. Drain and pat dry. Halve beans on the bias and transfer to prepared dish.
- In a bowl, toss breadcrumbs with chestnuts to combine. Melt 6 tablespoons butter; drizzle evenly over breadcrumb mixture, tossing until evenly absorbed. Toss in parsley; season with salt and pepper.
- In a small saucepan, heat milk and cream over medium-low until scalding and bubbles emerge along edges of pan. Remove from heat; cover to keep warm.
- Sprinkle garlic with a pinch of salt; mash into a paste with the side of a knife. In a large straight-sided skillet, melt remaining 6 tablespoons butter over medium heat. Add mixed mushrooms; season with salt. Cook, stirring occasionally, until tender and beginning to brown, 15 to 18 minutes. Add onion, season with salt, and cook, stirring often, until onion is translucent but not browning, about 5 minutes.
- Stir in garlic; cook 1 minute more. Sprinkle flour evenly over mixture and cook, stirring, 2 minutes. Slowly add milk mixture, stirring, and bring to a simmer. Cook until thickened slightly, about 3 minutes. Stir in nutmeg; season with salt and pepper. Pour mixture evenly over green beans in dish. Sprinkle breadcrumb mixture evenly over top.
- Bake until bubbly along edges and crisp golden brown on top, about 30 minutes. Meanwhile, toss sliced trumpet mushrooms with enough oil to lightly coat, season with salt and pepper, and arrange in a single layer on a rimmed baking sheet. Roast until tender and golden brown along edges, about 30 minutes. Top casserole with roasted mushrooms and serve warm.
HOMEMADE BUTTERED BREADCRUMBS
You may wonder why I would put something as mundane as a breadcrumb recipe in here. But hopefully my daughters can learn from my experience. And I really believe in getting everything down on paper for posterity! I learned to make these when I got tired of running to the store for breadcrumbs at the last minute because I never...

Steps:
- 1. Toast bread VERY lightly - on lightest setting - and allow to cool slightly. Spread each slice with soft butter, then dust with the Mrs. Dash seasoning. Cut each slice into quarters.
- 2. Drop bread a few pieces at a time into a food processor and pulse. Adjust your pulses depending on if you want fine or coarse crumbs.
- 3. These crumbs are very versatile. The longer you toast the bread, the dryer the crumbs. Or you can leave them untoasted for soft fresh crumbs. Use to top casseroles, souffles, add to savory puddings, and many other uses.
- 4. Store any extra in zip-top bags in the freezer.

Tips:
- Use fresh breadcrumbs: Fresh breadcrumbs will give you the best flavor and texture. You can make your own breadcrumbs by toasting and grinding slices of bread, or you can buy them pre-made from the store.
- Use unsalted butter: Unsalted butter will allow you to control the amount of salt in your breadcrumbs. If you use salted butter, be sure to taste the breadcrumbs before adding additional salt.
- Toast the breadcrumbs: Toasting the breadcrumbs will give them a golden brown color and a nutty flavor. You can toast the breadcrumbs in the oven or in a skillet.
- Season the breadcrumbs: You can season the breadcrumbs with a variety of herbs, spices, and other flavorings. Some popular options include garlic powder, onion powder, paprika, and dried thyme.
- Use the breadcrumbs immediately: Buttered breadcrumbs are best used immediately after they are made. If you need to store them, place them in an airtight container in the refrigerator for up to 3 days.
Conclusion:
Buttered breadcrumbs are a versatile ingredient that can be used in a variety of dishes. They can be used as a topping for casseroles, gratins, and pasta dishes. They can also be used as a binder for meatballs, burgers, and other meatloaf dishes. Buttered breadcrumbs are also a great way to add flavor and texture to soups, stews, and sauces. With so many uses, buttered breadcrumbs are a must-have ingredient in any kitchen.
