1 cup white sugar
1 cup brown sugar
½ cup vegetable oil
1 teaspoon vanilla extract
3 ½ cups all-purpose flour
1 ½ teaspoons baking soda
½ teaspoon salt
2 teaspoons ground cinnamon
½ cup chopped walnuts
2 cups peeled, chopped zucchini
1 cup chopped, peeled apple

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 2 - 9x5 inch loaf pans.
  • In a large bowl, combine eggs, white sugar, brown sugar, oil and vanilla until well blended. In a separate bowl, combine flour, baking soda, salt and cinnamon. Stir flour mixture into egg mixture. Fold in walnuts, zucchini and apple. Pour into prepared pans.
  • Bake 1 hour, or until top springs back when touched lightly in center. Let cool in pans 10 minutes before removing to wire rack to cool completely.

1 cup sugar
2 eggs
1 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon baking soda

1 cup chopped peeled apple
1/3 cup chopped walnuts
TOPPING:
1/3 cup all-purpose flour
2 tablespoons sugar
2 tablespoons brown sugar
1/2 teaspoon ground cinnamon

Steps:

  • In a bowl, cream butter and sugar. Beat in eggs and vanilla. Combine flour, baking soda and salt; stir into the creamed mixture alternately with buttermilk. Fold in apple and nuts. 1 (9 inch) pie shell
¼ cup butter
2 tart apples - peeled, cored and sliced
½ cup white sugar
½ teaspoon ground cinnamon
¼ cup butter, softened
1 ⅓ cups white sugar
4 eggs
1 teaspoon vanilla extract
2 tablespoons all-purpose flour
¾ cup buttermilk
¼ cup white sugar
¼ cup packed brown sugar
½ cup all-purpose flour
¼ teaspoon ground cinnamon
3 tablespoons butter

Steps:

  • Preheat oven to 300 degrees F (150 degrees C).
  • To Make Apple Filling: Melt 1/4 cup butter or margarine in skillet over medium heat. Add apple, 1/2 cup white sugar, and 1/2 teaspoon cinnamon. Cook 3 to 5 minutes, until tender. Set aside.
  • To Make Buttermilk Custard: In a large mixing bowl combine 1/4 cup softened butter or margarine with 1 1/3 cups white sugar. Beat until creamy. 1 tablespoon baking soda
1-1/2 teaspoons ground cinnamon
1/2 teaspoon ground nutmeg

1-1/2 cups vegetable oil
2 cups sugar
1 cup packed brown sugar
1 tablespoon vanilla extract
2 cups shredded unpeeled zucchini
1 cup shredded peeled apples
1-1/2 cups chopped pecans

Steps:

I decided to modify it and add one of my favorite ingredients, BUTTERMILK. I love buttermilk pound cake and had a recipe for it as well. I love the texture of a light pound cake, but the semi-sweetness of a bread. So, after testing and modifying, I finally have a great recipe, Zucchini Buttermilk Bread. Hope you Like it, I know I do!

1/2 cup butter, softened
1/3 cup oil
1 1/2 cups sugar
1/2 cup brown sugar
1/2 cup buttermilk
3 eggs

5 cups sliced peeled granny smith apples (about 2 pounds)
1 cup granulated sugar, divided
