Two types of flour contribute to these cupcakes' singular texture: Cake flour makes for a delicate crumb, while all-purpose flour keeps them from being too tender.

FROSTED CHOCOLATE-BUTTERMILK CUPCAKES

Dutch-process cocoa powder has a more mellow flavor and darker color than regular cocoa powder, which works well in this recipe.

Provided by Martha Stewart

Categories     Food & Cooking     Dessert & Treats Recipes     Cupcake Recipes

Time 1h

Yield Makes 12

Number Of Ingredients 12

3/4 cup all-purpose flour, (spooned and leveled)
3/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
6 tablespoons unsweetened cocoa powder, preferably Dutch-process
3 tablespoons unsalted butter, melted
6 tablespoons buttermilk
1 large egg
1 large egg white
Light Cream-Cheese Icing
Candy decorations (optional)

Steps:

  • Preheat oven to 350 degrees. Line standard 12-cup muffin tin (or two 6-cup muffin tins) with paper liners. In a large mixing bowl, combine flour, sugar, baking powder, baking soda, and salt; set aside.
  • With an electric mixer, combine cocoa and 3 tablespoons hot water until a thick paste forms (this process intensifies the chocolate flavor). Add butter, buttermilk, egg, and egg white; beat until combined. Whisk in flour mixture until smooth.
  • Scoop (or spoon) batter into prepared tin(s). Bake until a toothpick inserted in the center of a cupcake comes out clean, about 20 minutes. Transfer cupcakes to a wire rack to cool completely.
  • Use an offset spatula or butter knife to spread Light Cream-Cheese Icing over tops. Decorate as desired.

Tips:

  • For fluffy cupcakes, cream the butter and sugar together until light and fluffy. This incorporates air into the mixture, which helps the cupcakes rise.
  • Do not overmix the batter. Overmixing can result in tough, dense cupcakes.
  • Fill the cupcake liners only 2/3 full. This allows the cupcakes to rise properly without overflowing.
  • Bake the cupcakes at the correct temperature and for the correct amount of time. Underbaked cupcakes will be dense and gooey, while overbaked cupcakes will be dry and crumbly.
  • Allow the cupcakes to cool completely before frosting them. This will help the frosting set properly.
  • For a smooth, even frosting, use a piping bag or a spoon to spread the frosting onto the cupcakes.

Conclusion:

Buttermilk cupcakes are a delicious and versatile treat that can be enjoyed by people of all ages. With so many different frosting options, there is sure to be a buttermilk cupcake recipe that everyone will love. Whether you are a seasoned baker or a beginner, these buttermilk cupcake recipes are sure to impress your friends and family.
