Tips:

  • Use fresh shrimp: Fresh shrimp have a sweeter, more delicate flavor than frozen shrimp. If you're using frozen shrimp, thaw them in the refrigerator overnight or under cold running water for 30 minutes.
  • Make sure the shrimp are dry before frying: Pat the shrimp dry with paper towels before coating them in the batter. This will help the batter adhere to the shrimp and prevent it from falling off during frying.
  • Use a light-flavored oil for frying: Canola oil or vegetable oil are good choices. Avoid using olive oil or butter, as they can burn at high temperatures.
  • Heat the oil to the correct temperature: The oil should be between 350°F and 375°F. If the oil is too hot, the shrimp will cook too quickly and become tough. If the oil is too cool, the shrimp will absorb too much oil and become greasy.
  • Don't overcrowd the pan: Fry the shrimp in batches so that they have enough room to cook evenly.
  • Cook the shrimp until they are golden brown and crispy: This should take about 2-3 minutes per side.
  • Serve the shrimp immediately: Buttermilk fried shrimp are best served hot and crispy. You can serve them with your favorite dipping sauce, such as tartar sauce, cocktail sauce, or remoulade.
