BUTTERMILK MARBLE CAKE
You get the best of both worlds with this tender and moist cake adapted from a version that was served at the 76th birthday of Edna Lewis, the legendary Southern chef. It is quite simple to put together as far as cakes go, and the cream cheese chocolate frosting is a revelation.

Steps:
- Preheat the oven to 350 degrees. Grease a 9-inch tube pan with butter and dust with flour.
- Make the cake: In a medium bowl, sift together flour, baking powder, 1/2 teaspoon baking soda, the salt and 1 2/3 cups sugar.
- Put the dry ingredients in the bowl of a stand mixer fitted with the paddle attachment. Add the butter and mix on low speed until well blended; do not beat. Combine the buttermilk and vanilla and stir into the flour mixture, until just blended. Add the eggs and mix until just incorporated. Set aside.
- Melt 1 ounce chocolate in a medium heatproof bowl set over a pot filled with a few inches of simmering water. Remove from the heat and add the remaining 1/4 teaspoon baking soda, 1 tablespoon sugar and 2 tablespoons very hot water. Whisk together until just blended. Fold 1/4 of the batter (about 1 cup) into the chocolate mixture, to create chocolate batter.
- Pour the batter into the prepared tube pan, alternating the yellow and chocolate batters (two layers of each, beginning with the vanilla batter and ending with the chocolate batter), then run a knife through the batter to marble it. Bake for about 45 to 50 minutes. Start checking the cake after about 35 minutes; the cake should be a little soft in the middle, just barely bouncing back when touched. Remove from oven and let cool 30 minutes. Unmold onto a platter.
- To make the icing: Melt the 2 ounces chocolate as described above. In a stand mixer fitted with the paddle attachment, combine the cream cheese and sugar and beat until fluffy, about 2 to 3 minutes. Continue beating and add melted chocolate. If the mixture is too stiff, thin with milk, a tablespoon at a time, to bring it to a spreadable consistency. Spread the icing on the top and sides of the cooled cake.

Steps:
- Preheat your oven to 350 degrees Fahrenheit. Heavily spray a 10-inch bundt pan with cooking spray. This is essential for the bundt to come out cleanly.
- In a medium bowl, whisk all purpose flour, baking powder, baking soda, and salt together until combined.
- In a large bowl, whisk vegetable oil, granulated sugar, eggs, and sour cream together until smooth and fully combined.
- Alternate adding the dry ingredients and the buttermilk to the wet ingredients, starting and ending by adding the dry ingredients.
- Transfer just under half of the the mixture to the medium bowl that contained the dry ingredients. Stir unsweetened cocoa powder and hot water into the batter to create the chocolate batter.
- Add 1/3 of the vanilla batter to your prepared pan. Add about 1/4 cup (this does not need to be precise) of chocolate batter on top of the vanilla batter. Then, add 1/4 cup (again, this does not need to be precise) of vanilla batter directly next to the chocolate batter. Repeat this process and work your way around the bundt.
- Use a spoon to create a continuous "S" shape around the bundt. Circle around the bundt twice without removing the spoon. DO NOT make any more swirls. You will end up with a blended/mixed batter rather than a marbled batter.
- Bake bundt for 35-45 minutes until a toothpick inserted into the center comes out with moist crumbs and the top springs back when poked with your finger.
- Let bundt cool for at least 45 minutes before carefully removing to finish cooling on a wire cooling rack!
- Top if/as desired with powdered sugar, frosting, ganache, etc. and store covered at room temperature for up to 5 days.

Steps:
- Preheat oven to 350 degrees. Generously butter a 9-by-5-inch loaf pan; set aside. Whisk together the cake flour, baking powder, and salt; set aside.
- In the bowl of an electric mixer fitted with the paddle attachment, beat the butter and sugar until light and fluffy, about 5 minutes. Add eggs, one at a time, beating until combined after each addition and scraping down the sides of the bowl as needed. Mix in vanilla. Add flour mixture in 2 batches, alternating with the buttermilk and beginning and ending with the flour. Set aside 1/3 of the batter.
- In a bowl, mix cocoa and 1/4 cup plus 2 tablespoons boiling water with a rubber spatula until smooth. Add the cocoa mixture to the reserved cake batter; stir until well combined.
- Spoon batters into the prepared pan in 2 layers, alternating spoonfuls of vanilla and chocolate to simulate a checkerboard. To create marbling, run a table knife (or wooden skewer) through the batters in a swirling motion.
- Bake, rotating the pan halfway through, until a cake tester comes out clean, 40 to 50 minutes. Transfer pan to a rack to cool 10 minutes. Turn out cake from pan and cool completely on the rack. Cake can be kept in an airtight container at room temperature up to 3 days.

Steps:
- Preheat the oven to 325° F. Spray bottom only of a 9x13 inch glass baking pan with baking spray.
- Have ready two large mixing bowls. In the first bowl, mix together all dry ingredients for the yellow cake batter (flour through salt). In the second bowl, mix together all dry ingredients for the chocolate batter (flour through salt).
- Make the yellow batter first. Whisk the 2 eggs, yolk, vanilla and 2 tablespoons of the milk together in a small bowl. Add the butter to the dry ingredients and mash it around, then stir in the egg mixture until it's as blended as you can get it. Add the remaining ½ cup buttermilk and beat with a handheld mixer until smooth.
- Repeat the same procedure with the chocolate batter. Whisk the egg, vanilla and all the buttermilk together in a small bowl. Add the butter to the dry mixture and mash it around. Add the egg mixture and blend it as much as you can, then add the coffee and beat with a handheld mixer until smooth. Now you should have a bowl of vanilla batter and a bowl of chocolate batter. The chocolate batter will be very thin.
- Pour about half of the vanilla batter into the pan. Pour chocolate batter over the vanilla, then drop spoonfuls of vanilla batter of the chocolate, allowing parts of the chocolate batter to show through.
- Bake the cake for about 45 minutes or until a toothpick inserted in the center comes out clean. Let cool completely, then frost with a generous layer of Chocolate Frosting.
- In a large mixing bowl, mix the butter, sour cream sugar, cocoa, salt and 2 tablespoons of the cream as well as you can, then beat with a hand-held mixer until pasty and thick. Continue adding milk until you get a nice, smooth, spreading consistency. Spread over the cake. I like to store it in the refrigerator and bring it to room temperature before serving.

Tips:
- Prep Your Ingredients: Before you start baking, make sure all your ingredients are at room temperature. This will help them combine evenly and result in a smoother batter.
- Properly Measure: Use measuring cups and spoons for accurate measurements. This will ensure the perfect balance of flavors and texture in your cake.
- Cream Butter and Sugar: Take your time creaming together the butter and sugar until it's light and fluffy. This process incorporates air into the mixture, resulting in a lighter and airier cake.
- Add Eggs One at a Time: Gradually add the eggs to the creamed butter and sugar mixture, one at a time, to prevent curdling. Beat well after each addition until the mixture is smooth.
- Alternate Dry and Wet Ingredients: Add the dry ingredients (flour, baking powder, and salt) and wet ingredients (buttermilk, vanilla extract) to the batter alternately, beginning and ending with the dry ingredients. This will help prevent overmixing and ensure a tender cake.
- Divide and Swirl: Divide the batter into two equal parts. Add cocoa powder to one part and mix well. Pour the vanilla batter into the prepared pan, then top with the chocolate batter. Swirl the batters together using a knife or skewer to create a beautiful marbling effect.
- Bake at the Right Temperature: Bake the cake at the specified temperature and time in the recipe. Avoid opening the oven during baking, as this can cause the cake to fall.
- Cool Before Frosting: Allow the cake to cool completely before frosting. This will prevent the frosting from melting and sliding off the cake.
Conclusion:
With careful attention to detail and a bit of patience, you can create a stunning and delicious Buttermilk Marble Cake that will impress your family and friends. The combination of vanilla and chocolate flavors, coupled with the moist and tender texture, makes this cake a true classic. Remember, baking is a skill that improves with practice, so don't be discouraged if your first attempt doesn't turn out perfectly.
