Yield 12 servings

Number Of Ingredients 4

6 large sweet white onions, such as Vidalia
12 strips bacon
2 tablespoons butter
Salt and pepper

Wrap 2 slices of bacon horizontally around each onion, and secure them with toothpicks. Then put 1 teaspoon of butter in each core. Season with salt and pepper.

NEW POTATOES WITH GRILLED ONION BUTTER

New Potatoes with Grilled Onion Butter image

Provided by Amy Thielen

Categories     side-dish

Time 45m

Yield 6 servings

Number Of Ingredients 9

1 1/2 pounds fresh small potatoes
Salt
4 cloves garlic
3 dried bay leaves
12 ounces cipollini or spring onions, peeled and halved crosswise
Canola oil, for grilling onions
Freshly ground black pepper
1 stick (4 ounces) butter
1 sprig fresh rosemary

Steps:

  • Preheat a charcoal or gas grill to high.
  • Put the potatoes in a 2-quart pot. Add enough water to cover the potatoes by 2 inches and enough salt to make the water taste like seawater. Add the garlic and bay leaves.
  • Bring the potatoes to a boil and then cook at a gentle simmer until they test tender when poked with a thin fork, 15 to 20 minutes, though it depends on the size and age of the potatoes. Drain the contents of the pot into a sieve set over a heavy bowl, filling the bowl with the hot water just to warm it. Throw out the water, drop the potatoes in the bowl and cover the bowl tightly with plastic wrap to keep the potatoes warm.
  • As the potatoes cook, toss the onions with a little canola oil and salt and pepper and grill over medium-high heat until charred and soft. On the same grill, heat a cast-iron pan. Add the butter and cook until it browns. Remove from the heat, add the rosemary and give the pan a shake; the butter will foam. When it stops sizzling, add the onions to the butter and cook over low heat until they are very tender and the butter has taken on a pronounced oniony flavor.
  • Remove the spent rosemary sprigs. Pour the butter and onion mixture over the warm cooked potatoes and serve right away.

Yield Makes 4 servings

Number Of Ingredients 8

8 tablespoons (1 stick) chilled unsalted butter, divided
1 large shallot, minced
1/2 cup balsamic vinegar
2 large fresh rosemary sprigs
2 pounds mixed sweet onions, large shallots, baby leeks, and green onions
2 tablespoons olive oil
4 (1 1/4-inch-thick) New York strip steaks (each about 6 ounces)
2 tablespoons orange juice

Steps:

  • Melt 6 tablespoons butter in heavy small saucepan over medium heat. Add minced shallot and cook until translucent, about 2 minutes. Add vinegar and rosemary and simmer until syrupy and reduced to 1/2 cup, about 6 minutes. Remove from heat (balsamic sauce will separate as it stands).
  • Prepare barbecue (medium-high heat). Peel sweet onions, then cut into 1/2-inch-thick rounds. Skewer horizontally with toothpicks to keep intact. Peel shallots; cut in half lengthwise. Trim root ends and tops of leeks. Cut in half lengthwise; rinse to remove any dirt. Trim root ends of green onions. Place sweet onions, shallots, leeks, and green onions on rimmed baking sheet and drizzle with oil; toss. Sprinkle with salt and pepper.
  • Sprinkle steaks with salt and pepper. Grill sweet onions, shallots, leeks, and green onions until tender, turning often, about 5 minutes for green onions and 10 minutes for sweet onions, shallots, and leeks. Move onions to cooler part of grill to keep warm. Grill steaks to desired doneness, about 7 minutes per side for medium-rare. Transfer steaks and onions to platter; cover.
  • Remove rosemary sprigs from balsamic sauce; add orange juice and bring to simmer. Remove saucepan from heat; add remaining 2 tablespoons chilled butter and whisk until melted and sauce is smooth. Season sauce to taste with salt and pepper. Drizzle some of sauce over steaks and onions. Serve, passing remaining sauce separately.

Summertime Grilled Onions image

A man from Georgia told my husband about this idea. He wasn't sure about measurements or times but I made this and just used my own judgment. It's a nice departure from the same old stuff on the grill. It tastes like French Onion Soup!

Time 40m

Yield 1 serving(s)

Number Of Ingredients 4

1 vidalia onion (medium or large)
1 teaspoon butter, to taste
1 chicken bouillon cubes or 1 beef bouillon cube
aluminum foil

Steps:

  • Slice the ends off the onion and peel the outer skin off.
  • Place the onion on the aluminum foil (you could spray it first with nonstick spray).
  • With a sharp paring knife, scoop out some of the onion in the center to make an indentation.
  • Place the butter in the hollowed out area.
  • Then place the bouillon cube in the butter.
  • Wrap the onion up in the foil, sealing it tightly and place on a medium to low temperature grill and cook 30 to 40 minutes.

  • Open the foil packet and put the onion in a shallow bowl or right on your plate.
  • Be careful, it's juicy!
  • You can leave out the butter (although this might alter the flavor) or use a beef bouillon cube if you want.

Tips for Perfect Grilled Onions:

  • Choose the Right Onions: Select firm, medium-sized onions, such as yellow, white, or Vidalia onions, for grilling. Avoid using soft or sprouting onions, as they will not hold their shape well.
  • Slice Evenly: Cut the onions into even slices or wedges to ensure they cook evenly. The thickness of the slices will affect the cooking time, so aim for 1/2 to 1-inch thick slices for best results.
  • Marinate or Season: To add extra flavor, try marinating the onion slices in a mixture of olive oil, herbs, and spices before grilling. Alternatively, you can sprinkle them with salt, pepper, or your favorite seasonings just before grilling.
  • Grill Over Medium Heat: Preheat your grill to medium heat (around 350-400°F) to prevent the onions from burning. Grill the onions for 10-15 minutes, flipping them occasionally, until they are tender and slightly charred.
  • Monitor Closely: Keep an eye on the onions while grilling to prevent them from overcooking. The cooking time may vary depending on the thickness of the slices and the heat of your grill.

Conclusion:

Grilled onions are a versatile and delicious addition to various dishes. Whether you're using them as a topping for burgers and sandwiches, a side dish for grilled meats, or as an ingredient in salads and wraps, these caramelized beauties will elevate your culinary creations. Experiment with different marinades, seasonings, and grilling techniques to find the perfect grilled onion recipe that suits your taste.
