CHOCOLATE-COVERED CHERRY COOKIES
Inspired by the nostalgic candy, this indulgent dessert is both familiar and elegant. Almond paste fortifies the rich aroma of the cherries, while kirsch adds cherry and floral notes. High-quality candied cherries, such as Luxardo or Amarena, work best here for flavor, but you can also use cocktail maraschino or glace cherries in a pinch.

Steps:
- For the cookies: Position oven racks in the top and bottom thirds of the oven and preheat to 350 degrees F. Line 2 baking sheets with parchment.
- Whisk together the flour, cocoa, baking powder and salt in a bowl until evenly combined; set aside. Break the almond paste into small pieces in the bowl of a stand mixer, add the sugar and beat on low speed until the paste forms small crumbles in the sugar, about 2 minutes. Add half the butter and continue beating until the mixture starts forming large clumps and wiping the sides of the bowl. Add the remaining butter, increase the speed to medium high and beat until pale and fluffy, about 3 minutes. Add the vanilla, egg and kirsch if using and beat until smooth. Add the dry ingredients and beat on low until the dough just comes together.
- Scoop 30 tablespoon-size portions of dough, roll into balls and divide between the prepared baking sheets, spacing them evenly apart. Press a cherry in the center of each dough ball, then refrigerate the cookies on the baking sheets for 30 minutes.
- Bake, rotating the baking sheets from top to bottom and front to back halfway through, until the cookies are puffed and set at the edges, 12 to 15 minutes. Cool the cookies on the baking sheets for 1 minute, then transfer them to a wire rack to cool completely.
- For the glaze: Combine the sugar, 2 tablespoons of the reserved cherry syrup and 1/4 cup water in a small saucepan and bring to a boil, stirring to dissolve the sugar. Remove the saucepan from the heat, add the chocolate chips and stir slowly until smooth.
- Using a teaspoon, spoon the chocolate glaze over the cherry of each cookie, letting it drip down the sides. Allow the glaze to set before serving, about 10 minutes. Store the cookies in a single layer in an airtight containers for up to 5 days.

Steps:
- In a small sauce pan, over medium heat, cook the wine and cherries until the cherries soak up a lot of the wine, 6-10 minutes. Be very careful, as the wine- cherries mix can ignite. Just relax and don't put your face over the pot. In a microwave-safe bowl, combine the cherry mixture, granola, salt and morsels. Stir until evenly dispersed. Microwave at half power in one minute intervals, stirring between intervals, until the chocolate is melted and the whole kit is gooey and you want to eat it with a spoon. this shouldn't take more than 2-3 minutes if the cherry-wine combo was still hot when you added it. Using gloved hands, form the mix into cookie shapes, and place on a wax-paper- lined baking sheet. Refrigerate for 30 minutes. Pour a glass of Robert Mondavi Private Selection Cabernet Sauvignon. Devour cookies.

CHOCOLATE-CHERRY SANDWICH COOKIES
I make these often at Christmastime, but they're a winner for summer parties, too. Chilling the cookies before you dip them into chocolate is important because it firms up the filling. -Amy Sauerwalt, Columbia, Maryland

CABERNET AND CHERRY CHOCOLATE DROP COOKIES
Steps:
- marinate about 30 minutes. Drain cherries (and drink the wine...). In In a small bowl place the cherries and wine. Microwave 45 seconds and then let sit and another bowl melt the baking bar in a small bowl by microwaving it about 45 seconds and stirring. If chocolate is still lumpy, then microwave again for about 10-15 seconds, then stir. If still lumpy, repeat until smooth. Let chocolate sit to cool to room temperature. In a large bowl cream together the chocolate, oil and sugar. One at a time, beat in the eggs and then add in the vanilla extract. In another bowl mix together the baking powder, flour and the salt. Add the creamed chocolate mixture to the dry ingredients and mix all together. Fold in the drained "cabernet cherries," the chocolate chips and the pecan pieces. Roll the dough into 1" balls and then roll these lightly into powdered sugar to coat all sides. (If dough is too sticky to roll easily, refrigerate it about 30 minutes to an hour.) Place on cookie sheet, spacing cookies 2 inches apart. Bake at 350 degrees for 10 to 12 minutes.
Tips:
- Use high-quality ingredients for the best results. This means using good quality dark chocolate, butter, and flour.
- Don't overmix the dough. Overmixing will make the cookies tough.
- Chill the dough before baking. This will help the cookies keep their shape.
- Bake the cookies until they are just set. Overbaking will make them dry and crumbly.
- Let the cookies cool completely before storing them. This will help them keep their shape and flavor.
Conclusion:
These Cabernet and Cherry Chocolate Drop Cookies are the perfect treat for any occasion. They are easy to make and always a hit with friends and family. The combination of rich chocolate, sweet cherries, and a hint of Cabernet Sauvignon is simply irresistible. So next time you're looking for a delicious and festive cookie recipe, give these Cabernet and Cherry Chocolate Drop Cookies a try. You won't be disappointed!
