EX-GIRLFRIEND'S MOM'S SALSA FRESCA (PICO DE GALLO)

Ex-Girlfriend's Mom's Salsa Fresca (Pico de Gallo) image

My ex's mom had the best hand-chopped salsa fresca I have ever tasted back in college. Over the years, I have tweaked it to something my friends and family rave about. The trick for this salsa is marinating the onions and jalapenos in lime juice for about 5 minutes before adding the tomatoes and cilantro. There are two tricks to this recipe: 1. Hand-chop everything. It takes a while, but it is worth it. 2. The marinating is what makes this salsa special. Hope you enjoy.

CACTUS PICO DE GALLO SALSA

Cactus Pico De Gallo Salsa image

a salsa made with cooked cactus and other fresh ingredients and mexican cheese. This can be used as a dip or over foods as a salsa. My mother fixed this when we we were growing up, I guess because we had cactus growing in our yard and she had to find ways to use the cactus. Cactus is very delicious and can be used in several dishes

1 (24 ounce) jar cactus pieces
2 large tomatoes
1 medium yellow onion
2 jalapenos (depends on your taste)

1/4 lb queso fresco (mexican cheese)

Crumble Queso Fresco into the mix and add lemon juice. You may want to add a little lemon juice at a time and mix and taste until it is to your liking.

PICO DE GALLO DE ALICIA

Pico De Gallo de Alicia image

An authentic Mexican salsa made with tomatoes, onions, and jalapenos. Serve with tacos, nachos, tortilla chips, black beans, refried beans, or fajitas or use as an ingredient in many Mexican recipes. My family uses it as a side in which to dip grilled steak. If you like it hot, then this is for you; this pico is not for the faint of heart. It is very hot, which most people in my circle like. If you don't like highly spicy dishes, you might might want to try something less spicy or cut down the jalapeno and use a type pepper that is more to your taste.

Tips:

  • Choose the right cactus: Not all cacti are edible. For this recipe, you'll need to use a variety of cactus called "nopal." Nopal is also known as prickly pear cactus or paddle cactus. It has flat, oval pads that are covered in spines. Once the spines are removed, the pads can be eaten raw or cooked.
  • Prepare the cactus properly: Once you have chosen the right cactus, you need to prepare it properly. First, remove the spines from the pads. To do this, you can use a sharp knife or a pair of pliers. Once the spines are removed, rinse the pads thoroughly under cold water.
  • Use fresh ingredients: The best pico de gallo is made with fresh ingredients. This means using ripe tomatoes, onions, cilantro, and cactus. If you can't find fresh ingredients, you can use canned or frozen ingredients, but the flavor won't be as good.
  • Chop the ingredients evenly: When you're chopping the ingredients for pico de gallo, it's important to chop them evenly. This will help to ensure that the salsa has a consistent texture.
  • Season to taste: Once you've chopped all of the ingredients, it's time to season the salsa. Start by adding a little bit of salt and pepper. Then, taste the salsa and adjust the seasonings as needed.

Conclusion:

Cactus pico de gallo is a refreshing and flavorful salsa that's perfect for any occasion. It's easy to make and can be customized to your liking. So next time you're looking for a new salsa to try, give cactus pico de gallo a try!
