ASIAN-STYLE SHRIMP CAESAR SALAD
A friend from New Zealand served this to me about 20 years ago. Over the past 10 years I have self-published 8 cookbooks on various subjects and this is absolutely the most-commented on, highest praised recipe of all - for its awesome taste and simplicity. Be sure to use ONLY the Marukan brand Seasoned (orange label) rice vinegar or it just won't taste the same. For a good diet dressing substitute half the oil for water and toss with a green salad.

CAESAR-STYLE SALAD
Steps:
- In a small food processor blend together yogurt, anchovy paste, lemon juice, vinegar, mustard, Worcestershire sauce, garlic paste, 2 tablespoons Parmesan and salt and pepper to taste and transfer to a bowl or jar. Chill dressing, covered, at least 1 hour and up to 2 days.
- Divide romaine among 4 bowls and drizzle dressing over salads. Sprinkle each salad with 1 tablespoon onion and 1/2 tablespoon remaining Parmesan.
Tips:
- Use fresh romaine lettuce. Fresh, crisp romaine lettuce is the foundation of a great Caesar salad. Avoid wilted or bruised lettuce.
- Make your own Caesar dressing. It's easy to make and tastes so much better than store-bought dressing. Plus, you can control the ingredients and make it to your own taste.
- Use a variety of toppings. Croutons, Parmesan cheese, bacon, and hard-boiled eggs are all classic Caesar salad toppings. But you can also get creative and add other toppings like grilled chicken, avocado, or roasted red peppers.
- Serve the salad immediately. Caesar salad is best when served immediately after it's made. The dressing can wilt the lettuce if it sits for too long.
Conclusion:
Caesar salad is a classic for a reason. It's simple, delicious, and can be easily customized to your own taste. Whether you're looking for a quick and easy lunch or a side dish for a special occasion, Caesar salad is a great choice.
