2 cups half-and-half
1/2 vanilla bean, split
2/3 cup sugar
1 tablespoon instant coffee
6 egg yolks
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 275 degrees F.
  • Combine heavy cream, half-and-half, vanilla bean, and sugar in a 1-quart heavy saucepan. Heat over medium-low heat until mixture reaches 180 degrees F. Stir in instant coffee until dissolved.
