3 cups all-purpose flour
1 ½ cups white sugar
2 teaspoons baking soda
¼ teaspoon salt
2 eggs
1 (20 ounce) can crushed pineapple with juice
¾ cup white sugar
¾ cup evaporated milk
½ cup margarine
1 cup chopped pecans
1 ½ cups flaked coconut

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a 9x13-inch pan.
  • In a large bowl, sift together flour, 1 1/2 cup sugar, salt and baking soda. Add eggs, pineapple, and juice. Mix at low speed until well blended.
  • Pour batter into prepared pan. Bake in preheated oven until a tester comes out clean, 30 to 35 minutes. Have the topping ready when the cake comes out of the oven.
  • To Make Topping: In a saucepan, combine milk, 3/4 cup sugar, and margarine. Bring to a boil and cook for 2 minutes, stirring constantly. Add pecans and coconut and combine. Remove from heat.
  • When cake comes out of the oven, pour on the topping and carefully spread on while cake is still hot.

2 cups all-purpose flour
1 (15 ounce) can crushed pineapple
1 ½ cups white sugar
2 eggs, beaten
1 ½ teaspoons baking soda
1 pinch salt
1 cup white sugar
¾ cup evaporated milk
½ cup margarine
1 cup chopped pecans
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 300 degrees F (150 degrees C). Grease an 11x14-inch baking dish.
  • Mix flour, pineapple, 1 1/2 cups white sugar, eggs, baking soda, and salt together in a large bowl; pour into the prepared baking dish.
  • Bake in the preheated oven until a toothpick inserted in the center of the cake comes out clean, about 40 minutes.

1 1/2 cups sugar
1 teaspoon baking soda
2 eggs
1 (20 ounce) can crushed pineapple
3/4 cup sugar
1 (12 ounce) can evaporated milk
1/2 cup butter
1 cup coconut
1 cup pecans, toasted and chopped

Steps:

  • Cake:.
  • Beat eggs and sugar.
  • Sift dry ingredients and add to egg mixture, mixing well.
  • Mix in pineapple.
  • Bake in a 13x9 greased pan at 350 degrees for 35 minutes.
  • Icing:.

1 cup dark brown sugar, firmly packed
1/2 cup blackstrap molasses
2 eggs, separated
1/2 cup sour cream
2 cups all-purpose flour
2 teaspoons baking powder
1/2 teaspoon baking soda
2 tablespoons fresh ginger, finely grated
1 teaspoon salt
1 teaspoon cinnamon
1/2 cup pecans, chopped
powdered sugar
