1 ½ pounds catfish fillets, cut in strips
2 teaspoons Cajun-style blackened seasoning
4 tablespoons mayonnaise
½ cup butter
1 cup sliced fresh mushrooms
½ cup chopped fresh parsley
1 cup sliced green onions
1 pound small, peeled shrimp
2 (10.75 ounce) cans condensed cream of shrimp soup

Steps:

  • Sprinkle catfish strips with blackened fish seasoning. Spread catfish with mayonnaise. Place in a shallow dish, cover, and refrigerate for 1 hour.
  • In a large skillet, heat 4 tablespoons butter until it begins to sizzle. Sear the fish strips until golden, turning once. Transfer to a 9x13 inch baking dish, and arrange fish in a single layer.
  • In the same skillet, heat remaining 4 tablespoons butter over medium heat. Cook and stir mushrooms in butter until golden. Stir in parsley, green onions, and shrimp. Reduce heat to low, and cook until shrimp are pink and tender. Stir in cream of shrimp soup, and blend well. Ladle soup mixture over fish in baking dish.
  • Bake at 375 degrees F (190 degrees C) for 30 minutes.

I call it Cajun Compromise because the spice level is the result of a compromise between my wife and I. It can be served with tartar sauce for the timid, or hot sauce for the not-so-timid. 2 pounds catfish fillets, cut into 2 inch pieces
1 cup milk, or as needed
1 egg
¼ cup all-purpose flour
¼ cup cornmeal
2 teaspoons ground black pepper
2 teaspoons ground mustard
2 tablespoons Cajun seasoning
1 dash pepper sauce (such as Frank's Red Hot®)
¼ cup oil for frying, or as needed

Steps:

  • Soak the fish pieces in milk for at least 30 minutes.
  • In a small bowl, whisk together the egg and hot pepper sauce. In a separate bowl, stir together the flour, cornmeal, pepper, mustard and Cajun seasoning. Dip fish pieces into the dry mixture, then into the egg, then back into the dry mix. Set on a plate in the refrigerator and chill for about 15 minutes. This will help the batter stick to the fish.
  • Heat more than enough oil to cover the bottom of a large heavy skillet over medium-high heat. Fry fish pieces for 3 to 4 minutes per side, or until golden brown. Depending on how much and what kind of Cajun seasoning you used, some of the breading may get darker than the rest.
  • Drain the fish on paper towels and serve with hot sauce or tartar sauce. Enjoy!

1/2 cup stone-ground cornmeal
2 tablespoons Cajun Creole seasoning
1 teaspoon onion powder
1 teaspoon garlic powder

1 egg
2 pounds catfish nuggets, skin removed
Salt
1/4 cup lemon juice

Steps:

  • In heavy 3-quart saucepan, heat oil over medium-high heat to 375°F.
  • In shallow dish, stir together flour, cornmeal, Creole seasoning, onion powder, garlic powder and red pepper. In another shallow dish, beat egg with fork until foamy.
  • Sprinkle catfish nuggets with salt and lemon juice. Dip each nugget into beaten egg, then roll in flour mixture to coat. Drop 4 to 6 nuggets at a time into hot oil. Cook 2 minutes; turn and cook 1 minute longer or until deep golden brown. Remove from oil; drain on paper towels.

Steps:

  • For the sauce: In the bowl of a food processor, add the onions, celery and capers and process until finely chopped. Mix the chopped vegetables with the mayonnaise, relish, seafood seasoning, pepper and celery salt.
  • For the catfish: Preheat the deep fryer to 325 degrees F. In the bowl of a food processor, add the cornmeal, flour, pecans, seafood seasoning and celery salt and pulse until combined. 1/2 pound jumbo lump crabmeat
1 loaf 3 by 6 by 1-inch baked cornbread
1 cup cooked spinach,chopped
1/4 cup pine nuts,toasted
1 tablespoon creole mustard
Salt and pepper, to taste
6 (6-ounce) boneless catfish fillets, skinned
1 cup seasoned flour
1 cup buttermilk
2 cups fish fry mix
Cajun beurre blanc (recipe follows)
Lemon, for garnish
1 1/2 cups white wine
1 clove garlic, crushed
1 bay leaf
1 fresh lemon, halved
2 shallots, minced
1 pound butter, cut in 1-inch pieces
I cup heavy cream
1 teaspoon black peppercorns, cracked
1 tablespoon blackened seasoning, see previous recipe

Steps:

  • Mix together crabmeat, cornbread, spinach, pine nuts, mustard and salt and pepper. Lay fish skin side up and top with 2 1/2 ounces stuffing. Roll tightly and refrigerate until set. Dredge in seasoned flour, dip in buttermilk, and roll through fish fry mix. Deep fry at 350 degrees F until light brown. Remove to sheet pan and finish in a preheated 350 degree F oven until temperature of 150 degrees F. Top with 1 1/2 ounces cajun beurre blanc and garnish with lemon.
  • In heavy saucepan, add all ingredients except butter and cream. Reduce the liquid over low heat. Add heavy cream and reduce by half. Slowly add butter, whipping continuously-alternating pan on and off flame. Strain and add seasoning.

1/2 cup diced onion
1/2 cup diced red bell pepper
1/4 cup diced poblano chile

1 cup fresh tomato sauce
3 bay leaves
1 teaspoon Worcestershire sauce
1 teaspoon chipotle hot sauce
1 cup rice (Take note cooking time will be longer for brown rice) or 1 cup brown rice (Take note cooking time will be longer for brown rice)

12 ounces andouille sausages, sliced

Steps:

  • In a bowl combine shrimp, scallops, catfish and Creole seasoning, and work in seasoning well.
  • In a large, heavy, pot heat oil over high heat.
  • Saute the onion, peppers and celery, 5 minutes. Add garlic, tomato sauce, bay leaves, Worcestershire and chipotle sauces.
  • Stir in rice and add broth.
  • Reduce heat to medium and cook until rice absorbs liquid and becomes tender, stirring occasionally, about 15 minutes for white 30 minutes for brown rice.

2 tablespoons Cajun seasoning
1 egg

Canola oil, for frying
1 scallion, finely chopped
1 1/4 cups mayonnaise
1 tablespoon capers, finely chopped
1 teaspoon Cajun seasoning
1/2 teaspoon crushed garlic
2 1/2 teaspoons lemon juice
1 loaf store-bought garlic bread, baked per package directions
Butter lettuce
Sliced tomatoes
Sliced red onions

Steps:

  • Cut catfish fillets in half; set aside.
  • In a pie dish or plate, combine corn muffin mix and Cajun seasoning; set aside. In a pie dish lightly beat egg with 1 tablespoon water to make egg wash; set aside.

4 catfish filets
1/3 c butter, melted
2 Tbsp lemon juice
2 Tbsp dried thyme leaves
2 tsp salt
2 tsp black pepper
2 tsp paprika
1 tsp garlic powder
1/2 tsp ground red pepper

  • 1. Heat large cast iron skillet over high heat for 10 minutes.
  • 2. Rinse fillets and pat dry. Mix dry seasonings in a freezer bag. Brush both sides of fillets with lemon juice and butter. Sprinkle each side with spice mixture. 4 catfish fillets (4 oz. each)
1/2 teaspoon cayenne pepper
1 ounce wheat flakes cereal
1/2 teaspoon black pepper
1 tablespoon paprika
1/2 teaspoon white pepper
1/4 teaspoon salt
1/2 teaspoon thyme
1/4 teaspoon onion powder
1 tablespoon oil
1/4 teaspoon garlic powder

Steps:

  • Wash the fish fillets and pat dry.
  • In a bowl mix the ground wheat flakes and all the seasonings.
  • Pour the dry mixture onto a piece of foil or wax paper, and dip the fillets into the seasoning, coating both sides.
  • In a heavy cast iron fry pan heat the oil.
  • Fry the fillets for 2 minutes on each side.
  • Lay the fillets on a plate lined with a paper towel, cover with another paper towel, and pat to remove excess oil.

6 catfish fillets (about 1/2 lb. each)
1/2-1 teaspoon salt, depending on taste
1 teaspoon lemon pepper seasoning
1/4 teaspoon cayenne pepper
2 tablespoons oil
12 tablespoons melted butter, divided
1 cup fresh breadcrumb
4 tablespoons fresh lemon juice, divided
2 tablespoons fresh parsley, minced
2 -4 dashes Tabasco sauce, depending on taste
2 teaspoons Worcestershire sauce
1 pinch ground cayenne pepper
1/4 cup chopped green onion (including tops)
1 teaspoon thyme or 1 teaspoon basil, chopped
parsley (to garnish)
lemon slice (to garnish)

Steps:

  • Preheat oven to 400 degrees.
  • Rinse fillets and ry well.
  • Season each fillet with a mixture of salt, lemon pepper and cayenne.
  • Rub oil in a 9x13" glass baking dish.
  • Place fillets in prepared baking dish and top fillets with 4 Tablespoons of the melted butter.
  • Sprinkle with fresh bread crumbs and 2 Tablespoons of the fresh lemon juice.
  • Bake, uncovered, for 15 to 18 minutes, just until fish flakes easily.
  • Do not overcook.
  • Butter Sauce: Combine all remaining butter and lemon juice with other sauce ingredients, except parsley and lemon slices for garnish.
  • Simmer for 5 minutes.
  • Place fillets on serving dish, top with butter sauce and garnish with parsley and lemon slices.

1 teaspoon ground black pepper
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
1 teaspoon dried parsley
1 teaspoon ground cayenne pepper
1 teaspoon kosher salt
½ teaspoon dried oregano
½ teaspoon dried thyme
4 (4 ounce) catfish fillets, skinned
¾ cup unsalted butter

Steps:

  • In a shallow bowl, mix together the black pepper, garlic powder, onion powder, paprika, parsley, cayenne pepper, kosher salt, oregano, and thyme until thoroughly combined. Press the catfish fillets into the spice mixture to thoroughly coat.
  • Arrange a portable heat source outdoors, such as a butane burner or side burner of a gas grill. Melt butter in a glass or metal bowl. Light the burner, and place a large cast-iron skillet onto the burner over high heat. Pour about 1/4 cup of melted butter into the skillet; set remaining 1/2 cup of butter aside.
  • When the butter in the skillet is smoking hot, lay the catfish fillets into the skillet. Cook until the spices are burned onto the fillets and the catfish is opaque and flaky inside, about 3 minutes per side. Don't breathe smoke from burning spices. To serve, pour remaining 1/2 cup of butter over the catfish.
