- For the cheesecake mixture: Line a baking sheet with wax paper. Beat the cream cheese until smooth in a stand mixer fitted with the paddle attachment. Add the sugar, vanilla and graham cracker crumbs and beat until well combined. Scoop 1-tablespoon balls of the cheesecake mixture onto the prepared baking sheet. Freeze for about 30 minutes.
- For the strawberry sauce: Meanwhile, combine the strawberries, sugar and lemon juice in a medium saucepan over medium-high heat. Cook, stirring often, until the sugar is dissolved and the berries begin to break down and to give off their juices, 5 to 7 minutes. Transfer to a blender or food processor and puree until smooth. Strain through a fine-mesh sieve to remove the seeds. Set aside.
- For the batter: Heat 2 inches of vegetable oil in a deep, heavy-bottomed pot over medium heat until the oil registers 350 degrees F on a deep-frying thermometer. Line a baking sheet with paper towels and set aside.
- In a medium bowl, whisk together the flour, sugar, baking powder and salt. Add the milk and whisk until smooth.
- When the oil is ready, remove the cheesecake balls from the freezer. Working in batches, add the cheesecake balls to the batter a few at a time, turning to coat. Remove from the batter, allowing excess to drip off, and then carefully add to the oil. Fry, turning occasionally, until golden brown, 2 to 3 minutes per batch (allow the oil to return to temperature between batches). Remove from the oil with a slotted spoon and drain on the paper towels.
- Serve warm, with strawberry sauce.
DEE'S BLUE RIBBON ZUCCHINI CAKE/BREAD
I have hesitated to post this recipe because there are so many zucchini cake/bread recipes already posted here. However, since I have retired from "semi-commercial" baking, I thought I would start posting some of "those secret" recipes. This recipe won 2 blue ribbons for me at the tri-county Altamont Fair in 1987.

- Slice, seed and coarsely grate 2 to 4 large zucchini.
- Place about a handful or two of the grated zucchini into cheesecloth, or a clean cotton dish towel (do not use a terry cloth dish towel), and squeeze it until very dry; repeat with the remaining grated zucchini.
- Measure out 2 well packed cups of the prepared zucchini for the recipe.
- Grease and flour a 12 cup bundt pan (or two 8x4-inch loaf pans).
- Preheat oven to 350°F.
- In a bowl, sift together the flour, cinnamon, nutmeg, pumpkin pie spice, baking powder, salt, and baking soda.
- In a large bowl, beat eggs until light.
- Gradually add sugar, and continue beating until thick and lemon colored.
- Continue beating egg/sugar mixture, while adding the oil in a thin stream, beat until all is well blended.
- By hand, stir in vanilla, zucchini, nuts and raisins.
- Add the sifted dry ingredients, and stir until well mixed.
- Pour batter into prepared pan(s).
- Bake at 350°F for 60 to 75 minutes or until a cake tester (or wooden toothpick) inserted into the center comes out clean.
- Remove from oven and place pan(s) on wire rack to cool.
- Let cool in the pan(s) for about 5 minutes, remove cake from pan(s) and return the cake to the wire rack to continue cooling.
- Cake should be completely cooled before slicing.

- Heat oven to 350°F. Grease bottom only of 13x9-inch pan with shortening or cooking spray. Make and bake cake mix as directed on box for 13x9-inch pan, using water, oil and eggs. Cool 10 minutes. Run knife around sides of pan to loosen cake; remove from pan to cooling rack. Cool completely, about 1 hour.
- Line cookie sheet with waxed paper. Crumble cake into large bowl. Add frosting; mix well with spoon. Shape mixture into 1-inch balls. Place on cookie sheet. Freeze at least 15 minutes or until firm.
- Meanwhile, in medium microwavable bowl, microwave chocolate chips uncovered on High 1 to 2 minutes, stirring every 30 seconds, until softened and chips can be stirred smooth. Dip half to three-quarters of each strawberry in melted chocolate; place on waxed paper. Repeat with marshmallows. Place 1 cake ball on fork; dip cake ball in melted chocolate to cover. Gently tap off excess. Return to cookie sheet. Repeat with remaining cake balls. Let dipped strawberries, marshmallows and cake balls stand until set.
- Cut each shortcake roll into 6 pieces. On each skewer, carefully thread 1 cake ball, 1 strawberry, 1 marshmallow and 1 shortcake roll piece. Serve or store in cool place until serving time. For longer storage and for a crunchy outer chocolate shell, refrigerate kabobs.
