CROCK POT CALICO BEANS
This recipe came from a friends sister. Great for cook-outs, pot lucks.... Very forgiving recipe can easily adjust amounts to suit your tastes. I usually assemble ahead of time and refrigerate overnight before putting in the crock-pot. I have also made ahead of time and put in the freezer for DH to take as part of a "hunting" camp meal.

SLOW COOKER CALICO BEANS
With so many folks moving to meatless or healthier food choices, I decided to remove the meat from the original recipe but turn up the flavor. The savory veggie blend balances the sweetness of the baked beans. -David Dixon, Shaker Heights, OH

Tips:
- Use a variety of beans. The combination of beans in this recipe creates a hearty and flavorful dish. Feel free to experiment with different types of beans, such as kidney beans, black beans, or Great Northern beans.
- Soak the beans overnight. This will help to reduce the cooking time and make the beans more digestible. If you don't have time to soak the beans overnight, you can quick-soak them by bringing them to a boil in a large pot of water. Remove the pot from the heat, cover it, and let the beans sit for 1 hour.
- Use a flavorful broth. The broth you use will add a lot of flavor to the dish. Use a chicken broth, vegetable broth, or beef broth that you enjoy. You can also use water, but the flavor will be less pronounced.
- Add plenty of vegetables. Vegetables add flavor, texture, and nutrients to the dish. Use your favorite vegetables, such as carrots, celery, onions, and potatoes. You can also add other vegetables, such as green beans, corn, or tomatoes.
- Simmer the stew for at least 30 minutes. This will allow the flavors to meld and the beans to become tender. You can simmer the stew for longer if you want the beans to be even more tender.
Conclusion:
Calico Bean Pot is a hearty, flavorful, and easy-to-make stew that's perfect for a cold winter day. The combination of beans, vegetables, and broth creates a dish that is both satisfying and nutritious. With a few simple ingredients and a little time, you can create a delicious meal that the whole family will enjoy.
