CALIFORNIA BEAN DIP

My brother's girlfriend made this dip for our Christmas gathering. I think we all turned up our noses at the way it looked and the thought of the beans. I am the one who will try anything that is different. After the first bite I was ranting and raving over it. It disappeared quickly! Serve with corn chips.

Time 8h15m

Yield 4 cups, 32 serving(s)

Number Of Ingredients 9

2 (11 ounce) cans white corn, drained
2 (15 ounce) cans black beans, rinsed and drained
1/2 cup Italian salad dressing
1 cup ranch salad dressing
1 small onion, chopped
1 teaspoon hot pepper sauce
2 teaspoons cilantro, chopped fresh
1 teaspoon chili powder
1/2 teaspoon ground black pepper

Steps:

  • Mix all ingredients together in a bowl.
  • Cover and chill in the refrigerator 8 hours, or overnight, before serving.

Tips:

  • Use fresh or frozen beans: Canned beans are often high in sodium and can have a mushy texture. If you use canned beans, be sure to rinse them well before using.
  • Cook the beans until they are tender but not mushy: You want the beans to be soft enough to mash easily, but you don't want them to be falling apart. A good rule of thumb is to cook them for about 1 hour, or until they are easily pierced with a fork.
  • Use a food processor or blender to mash the beans: This will give you a smooth and creamy consistency. If you don't have a food processor or blender, you can also mash the beans by hand, but it will take a bit longer.
  • Season the dip to taste: Start with a basic seasoning of salt, pepper, and garlic powder, then add other spices or herbs as desired. Some popular additions include cumin, chili powder, paprika, and cayenne pepper.
  • Serve the dip with your favorite toppings: Some popular toppings include sour cream, salsa, avocado, and shredded cheese. You can also serve the dip with tortilla chips, crackers, or vegetables.

Conclusion:

California bean dip is a delicious and versatile dish that can be served as an appetizer, snack, or main course. It is a great way to use up leftover beans, and it can be easily customized to suit your own taste. With its creamy texture, savory flavor, and endless topping possibilities, California bean dip is sure to be a hit at your next party or gathering.
