KHMER PICKLED VEGETABLE SALAD

Khmer Pickled Vegetable Salad image

I grew up as a missionary kid in Cambodia, and most of my favorite foods have a Southeast Asian background. Locals love eating this pickled salad for breakfast, but I like it as a side for lunch or dinner, especially with chicken satay. -Hannah Heavener, Belton, Texas

Tips:

  • Choose the right cucumber: For the best results, use a fresh, crispy cucumber. English or Persian cucumbers are ideal because they have thin skins and few seeds.
  • Slice the cucumber thinly: This will help the cucumber absorb the flavors of the dressing more easily. You can use a mandoline or a sharp knife to slice the cucumber.
  • Make the dressing ahead of time: The dressing can be made up to 24 hours in advance, which gives the flavors time to meld. Just be sure to whisk the dressing well before using.
  • Use fresh herbs: Fresh herbs like cilantro, mint, and basil add a bright, aromatic flavor to the salad. If you don't have fresh herbs on hand, you can use dried herbs, but they won't be as flavorful.
  • Serve the salad chilled: This salad is best served chilled, so make sure to refrigerate it for at least 30 minutes before serving.

Conclusion:

Cambodian cucumber salad is a refreshing, flavorful salad that is perfect for a hot summer day. It is made with simple, fresh ingredients and is easy to make. With its sweet, sour, and spicy flavors, this salad is sure to please everyone at your table. So next time you are looking for a light and healthy side dish, give Cambodian cucumber salad a try. You won't be disappointed!
