Homemade Vegetable Beef Soup image

My mom made this soup when I was young. I have always loved her soups. When I was able to start cooking by myself I fell in love and have added and taken items away, but my fiance love my soups. And he isn't even big on soups. I hope your family enjoys the soup as much as mine does.

SOUP
2 ribs of celery chopped
1 medium onion chopped
1 small green bell pepper chopped
2 carrots sliced
3 medium potatoes diced
1 tablespoon minced garlic from jar
1 cup tomato puree
2 cans beef broth
1 can of water
1 tablespoon beef granules
1 large bay leaf
1 to 2 tablespoons special seasoning below or more to taste
1 cup cooked green beans
olive oil for frying
1 pound leftover chicken fried steak or use fresh beef
SPECIAL SEASONING
1/2 cup kosher sea salt
1/4 cup ground black pepper
2 tablespoons white ground pepper
1 1/2 teaspoons cayenne pepper
2 tablespoons ground cumin
1/4 cup garlic powder
2 tablespoons hungarian paprika
2 tablespoons dry minced onions

Steps:

  • 1. Combine all the ingredients for the seasoning and mix well. Store in an air tight pint jar. This seasoning is the seasoning I use for my Chicken Fried Steak recipe. https://www.justapinch.com/recipe/utahn/chicken-fried-steak-the-best/beef?k=chicken+fried+steak+bonnie&p=1&o=r It also perfectly seasons a hearty beef soup, and use it on pork chops.
  • 2. I use a dutch oven like this to make my soup.
  • 3. It takes about 20 minutes to chop and saute fresh meat. If using fresh meat, simmer the soup for about a half hour or 45 minutes before adding the vegetables. If you are using leftover chicken fried steak. It is already tenderized. Simmer the soup about two hours until the vegetables are tender.
  • 4. CHOP AND SAUTE Add celery, onion, bell pepper, carrots, potatoes and garlic to the dutch oven. Saute all the vegetables in a little olive oil, except the cooked green beans which you will add the last 5 minutes of cooking time.
  • 5. SEASON IT Add the beef broth, tomato puree, water, beef granules, bay leaf and the special seasoning. Add salt if necessary.
  • 6. SERVE IT Have a big bowl with cornbread and enjoy!

Tips:

  • Use a variety of vegetables. The more vegetables you use, the more flavorful your soup will be. Some good choices include carrots, celery, onions, potatoes, and tomatoes.
  • Don't be afraid to experiment with different seasonings. Common seasonings used in beef vegetable soup include salt, pepper, garlic powder, and onion powder. However, you can also add other herbs and spices to taste, such as thyme, rosemary, or paprika.
  • Simmer the soup for at least 30 minutes. This will allow the flavors to meld and develop. The longer you simmer the soup, the more flavorful it will be.
  • Add the beef last. This will prevent the beef from becoming overcooked and tough.
  • Serve the soup with a variety of toppings. Some popular toppings for beef vegetable soup include croutons, crackers, cheese, and sour cream.

Conclusion:

Beef vegetable soup is a delicious and hearty soup that is perfect for a cold winter day. It is also a great way to use up leftover beef. With a few simple ingredients and a little bit of time, you can make a delicious and healthy soup that your whole family will enjoy.
