PINEAPPLE RIGHTSIDE UP CAKE image

Yield makes 8 slices

Number Of Ingredients 1

2 cups flour 1 1/2 cups sugar 1/2 cup vegetable oil 1/2 cup chopped almonds 2 eggs 1/2 teaspoon salt 1/2 teaspoon baking soda 1 teaspoon vanilla extract 1 20 ounce can crushed pineapple in juicee drained 1 8ounce pkg. cream cheese 1/2 cup butter 1 1/2 cup confectioners sugar 1 teaspoon vanilla 1/2 cup or almonds sliced or chopped

Steps:

  • combine all ingredients in a large bowl. beat until smooth, pour into greased 2 eight inch round cake pans bake at 350 degrees until a tooth pick emerges clean. approx. 35-45 minutes. cool and ice with icing recipe: 1 8 oz, package cream cheese softened to room tempature and add to 1/2 cup butter cream togehter in bowl add sugar vanilla . beat well until smooth . Ice cake and add almonds on top and sides of cake . Store in refrigerator until ready to serve.
