I created this recipe on a family camping trip. I'd brought along a hodgepodge of ingredients, so I just threw them all together in a foil packet. Everyone said that the bundles were delicious. Ever since, I've grilled them at home with equally good results. -Lauri Krause, Jackson, Nebraska

Categories     Pork

Number Of Ingredients 12

1 large sweet onion, sliced
1 large green pepper,sliced
1 large sweet red pepper,sliced
1 large yellow pepper,sliced
4 medium potatoes,sliced 1/2 inch thick
6 medium carrots,sliced 1/4 inch thick
1 small cabbage, sliced
2 medium tomatoes, chopped
1 lb fully cooked polish sausage, cut into 1/2 inch pieces
1/2 c butter
1 tsp salt
1/2 tsp pepper

Steps:

  • 1. Place vegetables in order listed on three pieces of double-layered heavy duty foil(about 18in. x 18 in.). Add sausage; dot with butter. Sprinkle with salt and pepper. Fold foil around the mixture. Place on grill or campfire until done.

Tips:

  • Choose sturdy vegetables: Vegetables that hold their shape well, such as potatoes, carrots, and turnips, are best for campfire bundles. Avoid delicate vegetables, such as leafy greens and tomatoes, as they will wilt and fall apart.
  • Cut vegetables into uniform pieces: This will ensure that they cook evenly. If you are using vegetables of different sizes, cut them into smaller pieces so that they cook at the same rate.
  • Season vegetables generously: Campfire bundles rely on the natural flavors of the vegetables, so it is important to season them well. Use a variety of herbs, spices, and salt and pepper to taste.
  • Wrap bundles tightly: This will help to keep the vegetables moist and flavorful. Use foil or parchment paper to wrap the bundles, and make sure to seal them tightly.
  • Cook bundles over medium-low heat: This will prevent the vegetables from burning. If you are cooking the bundles over a campfire, place them on the edge of the fire where the heat is less intense.

Conclusion:

Campfire bundles are a delicious and easy way to cook vegetables over a campfire. They are perfect for a camping trip or a backyard cookout. With a little planning and preparation, you can create a variety of flavorful and satisfying dishes. So next time you're looking for a new way to cook vegetables, give campfire bundles a try!
