1 stick unsalted butter, plus more for greasing the pan
1 bag good-quality semisweet chocolate chips
2 cups heavy cream
3 tablespoons instant espresso
1 teaspoon ancho chile powder
1 bag mini marshmallows, 1 cup set aside
1 tablespoon vanilla paste
7 cups popped popcorn
2 teaspoons smoked sea salt
2 sleeves honey graham crackers, 2 sheets set aside

Steps:

  • Butter a 9- by 11-inch pan.
  • Place the chocolate in a large bowl over a double boiler at a low simmer. Stir the chocolate until melted, and then turn off the heat. In a separate pot, bring the cream just to a simmer. Stir in the espresso and chile powder, and then remove from the heat. Add the cream mixture to the chocolate and whisk into a smooth, shiny consistency. Refrigerate.
  • Melt the butter in a large pot over low heat. Stir in the marshmallows and cook until fully melted. Add the vanilla paste and popped popcorn, coating thoroughly.
  • Press half of the popcorn mix into the prepared pan. Sprinkle with half of the salt and the chocolate mixture. Spread the remaining popcorn mix on top, sprinkling with the rest of the salt. Refrigerate until set.

1 1/4 teaspoons baking soda
1 teaspoon salt
1/4 teaspoon baking powder
1 cup hot water
2/3 cup unsweetened baking cocoa
3/4 cup shortening
1 1/2 cups granulated sugar
2 eggs
1 teaspoon vanilla
20 individually wrapped red cinnamon hard candy disks, unwrapped
20 individually wrapped yellow butterscotch hard candy disks, unwrapped
60 pretzel sticks, broken in half
48 miniature marshmallows
24 toothpicks
1 jar (7 oz) marshmallow creme
1 cup butter or margarine, softened
2 cups powdered sugar
1/8 teaspoon lemon-yellow gel food color

Steps:

  • Heat oven to 350°F. Place paper baking cup in each of 24 regular-size muffin cups.
  • In medium bowl, mix flour, baking soda, salt and baking powder; set aside. In small bowl, mix hot water and cocoa until dissolved; set aside.
  • In large bowl, beat shortening with electric mixer on medium speed 30 seconds.   • Bake 20 to 25 minutes or until toothpick inserted in center comes out clean. Cool 5 minutes. Remove cupcakes from pans; place on cooling racks. Cool completely, about 30 minutes.
  • Meanwhile, line 15x10-inch pan with foil; spray foil with cooking spray. Place unwrapped cinnamon and butterscotch candies in freezer plastic bag; with hammer or meat mallet, finely crush candies. Pour crushed candies into pan; spread in thin layer. Bake at 350°F 6 to 8 minutes or until completely melted. Cool completely before handling.

Steps:

  • Heat oven to 375°F (350ºF for convection ovens).
  • Beat butter, egg, and Cookie Mix with hand mixer until blended. Freeze dough for 15 minutes.
  • Scoop chilled cookie dough into 12 mounds, using 1 tablespoon dough for each mound; flatten each into a 2-inch (5 cm) round. Place 2 Chocolate Wafers in center of each round and mold dough around wafers to completely enclose wafers.
  • Set aside one tablespoon of Graham Crumbs, placing the remaining crumbs into a shallow dish. Roll each of the dough balls in the crumbs until coated and place on a parchment-lined baking sheet.
  • Bake for 8 to 9 minutes, or until puffed and lightly browned around the edges.
  • While the cookies bake, cut each marshmallow lengthwise in half, then cut each marshmallow piece crosswise in half using kitchen shears.

4 hot dog buns, cut in 1-inch pieces
4 eggs
1 (14 ounce) can sweetened condensed milk
3/4 cup milk
1 teaspoon vanilla
1/4 teaspoon ground nutmeg
1 cup mini marshmallows
3/4 cup semisweet chocolate piece
5 graham cracker squares, coarsely crushed (about 1/2 c)
2 tablespoons milk

Steps:

  • Preheat oven to 325°F Grease a 2 qt square baking dish. Set aside. Place bun pieces on shallow baking sheet. Bake 7 to 8 minutes or until dry and crisp. Cool.
  • In medium bowl, lightly beat eggs. Stir in sweetened condensed milk, 3/4 c milk, vanilla and nutmeg; set aside.
  • Place bun pieces in prepared baking dish. Sprinkle with 1/2 c each of the marshmallows and chocolate pieces. Evenly pour milk mixture over all. Let stand 5 minutes. Sprinkle with crushed graham crackers. Bake, uncovered, for 35 minutes. Sprinkle with 1/4 c of the remaining marshmallows.
