1/2 lb bacon, cut into 1/2 inch pieces
1 medium red onion, cut into 1/4 inch pieces
3 celery ribs, cut into 1/4 inch pieces
4 tablespoons unsalted butter
1 cup all-purpose flour
2 cups chicken broth
4 cups milk
3/4 lb white cheddar cheese, grated
1 tablespoon hot pepper sauce
1 tablespoon Worcestershire sauce
1/4 teaspoon salt
1/8 teaspoon black pepper
1/2 cup warm beer
5 scallions, chopped

Steps:

  • In large deep pot, cook bacon over medium heat for 5 minutes, stirring, until lightly browned. Add onion, celery and butter; saute until onion has softened, about 5 minutes.
  • Add flour and cook, stirring constantly, for about 4 minutes over medium heat. Whisk in chicken broth and bring to a boil for 1 minute. Reduce heat to a simmer; cook 15 minutes, stirring occasionally.
  • Add milk; continue to simmer 15 minutes. Do not bring to a boil.

1/4 cup carrot, finely grated
1/4 cup onion, chopped
3 tablespoons flour
1/2 teaspoon paprika

2 cups cheddar cheese, shredded (mild, medium, or old)

4 medium potatoes, peeled and diced
2 celery ribs, diced
1 medium carrot, diced
1 small onion, diced
6 ounces Canadian bacon, trimmed and diced
2 tablespoons butter
2 tablespoons all-purpose flour
1 cup whole milk
2 cups shredded cheddar cheese
1/8 teaspoon pepper

Steps:

  • In a Dutch oven or soup kettle, combine the first 5 ingredients; bring to a boil. Reduce heat; cover and simmer for 20 minutes or until vegetables are very tender. With a potato masher, mash vegetables several times. Add bacon; continue to simmer. , Meanwhile, melt butter in a small saucepan; stir in the flour and cook, stirring constantly, for 1 minute. 1 onion, chopped
¼ cup all-purpose flour
3 cups chicken broth
3 cups milk
1 pound shredded Cheddar cheese

  • In a 3 quart saucepan over medium-high heat, melt butter or margarine. Add onion and cook until tender, about 5 minutes. Stir in flour and cook until flour has blended with onion mixture.
