White Chocolate Fudge with Cranberries and Candied Citrus image

Rich and fruity, this fudge takes its flavor cues from the classic Italian Christmas bread panettone. It also requires minimal work--just mix the ingredients, pour into a loaf pan, and let set in the refrigerator. Then slice and box the old-fashioned candy-shop way, with a knife to encourage instant gratification.

Tips:

  • Choose fresh cranberries: Look for plump, firm cranberries with a deep red color. Avoid any berries that are bruised or moldy.
  • Use a large pot: The cranberries will expand as they cook, so it's important to use a large pot to prevent them from boiling over.
  • Stir frequently: Stir the cranberries frequently while they are cooking to prevent them from sticking to the bottom of the pot.
  • Cook until the cranberries are translucent: The cranberries are done cooking when they are translucent and have softened. This usually takes about 15-20 minutes.
  • Drain the cranberries: Once the cranberries are cooked, drain them in a colander to remove the excess syrup.
  • Coat the cranberries in sugar: While the cranberries are still warm, coat them in sugar. This will help them to keep their shape and prevent them from sticking together.
  • Store the cranberries in an airtight container: Candied cranberries can be stored in an airtight container in the refrigerator for up to two weeks.
