2 1/2 cups vanilla wafter crumbs
1/3 cup Land O Lakes® Butter melted
Topping
1/2 cup pecan halves
1/3 cup halved candied green cherries
1/3 cup halved candied red cherries
1/3 cup chopped candied pineapple
1 (14-ounce) can sweetened condensed milk
2 tablespoons orange juice
1 teaspoon freshly grated orange zest
1/8 teaspoon ground nutmeg

Steps:

  • Heat oven to 350°F.
  • Combine all crust ingredients in bowl; mix well. Press onto bottom of ungreased 13x9-inch baking pan. Bake 8-10 minutes or until lightly browned.
  • Arrange pecans, green cherries, red cherries and pineapple on top. Combine all remaining ingredients in medium bowl; mix well. Pour over fruit and nuts. Bake 22-25 minutes or until edges begin to brown. Cool completely. Cut into bars with sharp, wet knife.

1/2 cup all-purpose flour
1/2 teaspoon baking powder
1/4 teaspoon salt
1-1/4 cups chopped dates
3/4 cup chopped candied pineapple
3/4 cup chopped red candied cherries
1 large egg
1/4 cup packed light brown sugar
1/2 teaspoon vanilla extract
2 cups pecan halves

Steps:

  • Line an 8-in. square baking dish with parchment, letting ends extend up sides of pan; grease and set aside., In a large bowl, mix the flour, baking powder and salt. Add the dates, pineapple and cherries; toss to coat. In a small bowl, whisk the egg, brown sugar and vanilla until blended; stir into fruit mixture. Stir in pecans. Press firmly into prepared baking dish., Bake at 325° for 35-40 minutes or until a toothpick inserted in center comes out clean and top is golden. Cool in pan for 10 minutes. Using parchment, transfer to a wire rack. Remove paper; cool fruitcake completely. , Using a serrated knife, cut into 1-in. squares. Store in an airtight container.

Basic Vanilla Cookie Dough
3/4 cup chopped candied citron
3/4 cup glaceed cherries

Steps:

  • Once the flour is incorporated according to dough recipe, beat in citron and cherries. Divide dough into 2 pieces. Shape each into a 10-inch-long square-shaped log. Wrap in parchment. Refrigerate until very firm, about 2 hours.

1 cup icing sugar

  • In a large bowl and using electric mixer beat eggs with 1c icing sugar until light and fluffy.
