CANDIED SWEET POTATOES WITH PECANS
This is my favorite style of a Thanksgiving or Christmas time sweet potato side dish, since I'm not really a big fan of whipped sweet potatoes with marshmallow toppings. This is a very sweet dish (candied) but more to my liking. The spice and pecans add a whole new level of taste and texture.

CITRUS CANDIED SWEET POTATOES

I am updating this recipe based upon CountryLady's review. I made this recipe using fresh sweet potatoes and it is so much better. I am leaving the canned as an option. Both ways are good.

Steps:
- 1. In a medium saucepan, add potatoes and 1/2 tsp salt, cover with water. Bring to boil, then reduce to simmer. Cook until fork tender and drain. In another saucepan, add the butter, brown sugar, pinch salt, pineapple juice, cinnamon and nutmeg. Bring to a boil and simmer until thickened some - won't be real thick, more like a glaze. If you want a thicker glaze, add a small amount of corn starch to the pineapple juice before adding. Once sauce is to desired thickness and potatoes are cooked. Add the drained pineapple to the glaze and cook until heated through. Stir in the vanilla. Gently toss the sweet potatoes with the glaze, being careful not to break up potatoes too much. Heat through for a few minutes and pour into a serving dish. Sprinkle with pecans if using. Serve immediately.
Tips:
- Choose the right sweet potatoes: Select firm and brightly colored sweet potatoes without blemishes or bruises. Garnet and Jewel sweet potatoes are excellent choices for candying.
- Peel the sweet potatoes carefully: Use a sharp knife to peel the sweet potatoes thinly to minimize nutrient loss and maintain their shape during cooking.
- Cut the sweet potatoes uniformly: Cut the sweet potatoes into evenly sized pieces to ensure consistent cooking. Aim for 1-inch cubes or 1/2-inch thick slices.
- Use a large pot: Choose a pot large enough to accommodate the sweet potatoes and syrup comfortably, allowing for some expansion during cooking.
- Simmer gently: Maintain a gentle simmer throughout the cooking process to prevent the sweet potatoes from breaking apart. Stir occasionally to ensure even cooking.
- Monitor the syrup thickness: Keep an eye on the syrup as it reduces. The desired consistency is slightly thick and syrupy, coating the sweet potatoes well. If the syrup becomes too thick, add a little water or orange juice to thin it out.
- Use fresh herbs and spices: Incorporate fresh herbs like thyme or rosemary and spices like cinnamon, nutmeg, and ginger to enhance the flavor of the candied sweet potatoes.
- Experiment with different glazes: Try different glazes to add a unique touch to your candied sweet potatoes. Popular options include a maple glaze, honey glaze, or a brown sugar glaze.
Conclusion:
Candied sweet potatoes are a versatile and delectable dish that can be enjoyed as a side dish, dessert, or even a snack. With careful selection of ingredients, attention to cooking techniques, and a touch of creativity, you can create candied sweet potatoes that are not only visually appealing but also bursting with flavor. Whether you prefer a classic recipe or a modern twist, experimenting with different ingredients, glazes, and presentation styles will allow you to tailor this dish to your preferences and impress your family and friends.
