CHOCOLATE CHIP PEANUT BUTTER COOKIES
Yeah, yeah, I know--there are a million recipes for peanut butter cookies with chocolate chips out there. But hey, what's wrong with one more? Especially when it's easy, delicious, quick? This recipe makes cookies that are thick, chewy on the inside and crisp on the outside. The yield is fairly small, so it's good if there are only 1 or 2 people in your house.

PEANUT BUTTER CHOCOLATE CHIP COOKIES
I love these rich, very sweet, addictive cookies. I adapted this recipe from one I found and loved on allrecipes.com. I have altered it somewhat to suit my tastes and my preferred baking techniques but this is based on the recipe known there as Aunt Cora's World's Best Cookies. Cook time is per batch, cooking one sheet at a time.

Steps:
- Preheat oven to 325 degrees F.
- Have ready at least 2 baking sheets lined with parchment paper.
- Cream butter until smooth.
- Add peanut butter and both sugars and beat until combined well.
- Add egg and beat well.
- Stir in flour and baking soda gradually until well combined.
- Stir in chocolate chips by hand.
- Using a meatball scooper or a spoon, scoop out small portions of dough and drop onto parchment lined cookie sheets, leaving 2" gap between each cookie.
- Bake for about 15 minutes or until cookies are just firm around the edges- don't overbake- if you wait until they are brown on top, they will be too hard.
- Slide parchment sheet, cookies and all, carefully off pan and onto your counter, set a new piece of parchment paper onto your baking sheet and repeat until all dough is baked.
- Meanwhile, as the next batch bakes, remove baked cookies from the parchment and let cool completely on wire racks.
- Wipe off the crumbs from the old sheet of parchment and you can reuse it for your next batch.
- These will keep about 3 days stored in a cookie tin (for crisp cookies) or an airtight plastic container (for softer cookies).

These cookies have a pretty mild taste. They're sweet, but not too sweet..If you have a more 'adult taste', then you'll probably like these cookies. For a sweeter version of this, try also adding 1/2 cup brown sugar.

CHOCOLATE CHIP-PEANUT BUTTER COOKIES
Natural no-stir peanut butter is a special boon for those who like to bake with peanut butter. It's made without trans fats, yet stays smooth and doesn't separate, as most natural peanut butters do.
Provided by Bon Appétit Test Kitchen
Yield Makes about 2 1/2 dozen
Number Of Ingredients 11
Steps:
- Position 1 rack in top third and 1 rack in bottom third of oven and preheat to 375°F. Line 2 baking sheets with parchment paper. Whisk flour, baking powder, and salt in medium bowl to blend. Using electric mixer, beat peanut butter, butter, 1/3 cup sugar, and brown sugar in large bowl until smooth. Beat in egg and vanilla extract, then flour mixture (dough will look crumbly). Stir in bittersweet chocolate chips and chopped Butterfinger candy.
- Place remaining 1/4 cup sugar in small bowl. Using 1 1/2 tablespoons dough for each cookie, roll dough between palms to form balls. Roll balls in sugar and place on prepared baking sheets, spacing 1 inch apart. Using bottom of glass or measuring cup, press cookies into 1/3-inch-thick rounds.
- Bake cookies until edges are golden brown, 15 to 16 minutes, reversing sheets halfway through cooking time for even baking. Transfer parchment paper with cookies to rack and cool.
Tips:
- Use a kitchen scale to accurately measure ingredients, especially flour and sugar. This will ensure that your cookies turn out perfect every time.
- Don't overmix the cookie dough. Overmixing will make the cookies tough.
- Chill the cookie dough for at least 30 minutes before baking. This will help the cookies hold their shape and prevent them from spreading too much.
- Bake the cookies at 350 degrees Fahrenheit for 10-12 minutes, or until the edges are golden brown and the centers are set.
- Let the cookies cool on a wire rack before enjoying them.
Conclusion:
Candi's Chocolate Peanut Butter Chip Cookies are the perfect treat for any occasion. They're easy to make, delicious, and sure to be a hit with everyone who tries them. So next time you're looking for a sweet treat, give this recipe a try. You won't be disappointed!
