3 (14.25 ounce) cans hearts of palm, drained and sliced
2 (.7 ounce) packages dry Italian-style salad dressing mix
½ cup white wine or champagne vinegar
6 tablespoons water
1 cup olive oil
1 (8 ounce) jar green olives, sliced
1 (6 ounce) can sliced black olives
2 tablespoons bacon bits

This is a Rhode Island Clam Chowder interpretation with hearts of palm instead of potatoes. The best bet with this recipe is to not get canned hearts of palm, but fresh, and cut as medallions similar to the canned versions. One key tip in this recipe, do NOT overcook the calms, they will turn into rubber! 1 cup hearts of palm
1 cup clam juice
1/4 cup bacon
1/2 cup celery
1/2 cup shallot
2 garlic cloves
2 tablespoons butter
1/2 teaspoon thyme
1/2 teaspoon cayenne

  • Chop Celery and the Hearts of Palm into bite sized pieces. Use fresh hearts of palm over canned, to get a less "canned" flavor. Dice shallots fairly small. mince the garlic.
