CARAMEL APPLE SALAD

Caramel Apple Salad image

This is a recipe from my Grandma Anne and is an oldie. It tastes just like a caramel apple without the caramel! It is so refreshing on a hot summer day.

Provided by Julie Pawlacyk

Categories     Fruit Desserts

Time 20m

Number Of Ingredients 7

3 large granny smith apples
1 can(s) 20 oz. crushed sweetened pineapple(drained well)
12 oz cool whip thawed (regular)
2 c powdered sugar
2 eggs
1 c butter softened (no substitutions)
1 jar(s) dry roasted peanuts

Steps:

  • 1. Dice the apples into small pieces and set aside.
  • 2. Combine the eggs, butter and slowly add powdered sugar in batches. Beat with a hand mixer for 3-5 minutes. Fold in cool whip and mix well.
  • 3. Add remaining ingredients except peanuts and refrigerate for several hours, preferably over night.
  • 4. Chop the roasted peanuts up and sprinkle over the salad right before you serve it.
  • 5. **This salad only stays good for a two days at most in the refrigerator. It is best to sprinkle the chopped nuts on before you serve it or they will get soft**

Tips:

  • To make the caramel sauce, use a heavy-bottomed saucepan and stir constantly to prevent burning.
  • If you don't have a candy thermometer, you can test the caramel sauce by dropping a small amount into a glass of cold water. If it forms a soft ball, the sauce is ready.
  • For a sweeter salad, use more caramel sauce. For a more tart salad, use less.
  • If you're using store-bought caramel sauce, be sure to warm it up before using.
  • To make the candied walnuts, simply toss them with sugar and cinnamon, then bake them in a preheated oven until they're golden brown.
  • For a more flavorful salad, use a variety of apples. Some good options include Granny Smith, Honeycrisp, and Braeburn.
  • If you're making the salad ahead of time, be sure to store it in the refrigerator. The salad will keep for up to 2 days.

Conclusion:

Caramel apple salad is a delicious and easy-to-make dish that's perfect for any occasion. The sweet and tart flavors of the apples pair perfectly with the creamy caramel sauce, and the crunchy walnuts add a nice textural contrast. This salad is sure to be a hit with everyone who tries it!
