2/3 cup butter, softened
1 cup packed brown sugar
1 egg
1 teaspoon vanilla extract
1-3/4 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
FILLING:
1 package (8 ounces) chopped dates
1/2 cup water
1/3 cup sugar
1/2 cup finely chopped walnuts
2 tablespoons chopped red candied cherries

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy. Beat in egg and vanilla. Combine the flour, baking soda and salt; gradually add to the creamed mixture. Refrigerate for at least 2 hours or until easy to handle. , Meanwhile, in a large saucepan, combine the dates, water and sugar. Cook and stir over medium heat until thickened, about 5 minutes. Stir in walnuts and cherries. Cool completely. , Divide dough in half; roll one portion between two sheets of waxed paper into a 12-in. x 10-in. rectangle. Spread with half of the filling. 3 large eggs
1 teaspoon vanilla extract
4 cups all-purpose flour
1/2 teaspoon salt

FILLING:
2-1/2 cups chopped dates
1 cup sugar
1 cup water
1 cup finely chopped pecans

Steps:

  • In a large bowl, cream butter and brown sugar until light and fluffy. Beat in eggs and vanilla. Combine the flour, salt and baking soda; gradually add to creamed mixture and mix well. 3 cups pretzel, crushed
2 cups crispy rice cereal
10 oz marshmallow
¼ cup butter
13 oz caramel, spreadable
11.5 oz semi-sweet chocolate chips
nonstick spray

Steps:

  • Preheat oven to 300˚F (150˚C).
  • Combine cereal and crushed pretzels in a large bowl.
  • In another large bowl, melt marshmallows and butter in the microwave for 1 minute & 30 seconds, stirring half way. (Time may vary depending on your microwave, so, keep an eye on it!)
  • Combine cereal, pretzels and melted marshmallows. Mix well.
  • Prepare a baking sheet with parchment paper and spray generously with non-stick cooking spray. (You might want to spray your hands too!)
  • Remove marshmallow mixture from the bowl and place onto the baking sheet. Spray another piece of parchment paper with non-stick spray and lay the sprayed side on top of the marshmallow mixture.
  • Roll out with a rolling pin into a thin layer.
  • Remove the top layer of parchment paper and evenly spread caramel over the marshmallow mixture. Pour chocolate chips over the caramel.
  • Bake for 2 minutes, or until chocolate chips spread easily across the caramel.
  • Carefully & tightly roll it up longways, peeling back the parchment paper as you go. Cover in plastic wrap & chill for 2-3 hours, or until it has firmed up nicely.

My mom used to make these every Christmas for us when I was growing up, and they bring back special memories for me, especially around the holidays. We have been eating these for 50 years! These are my all time FAVORITE cookies :) They make a lot of cookies, and the amount really depends on how thick you actually roll the dough, and how thin or thick you cut the cookies. The cooking time is for EACH batch of cookies, and the prep time does not include time to chill dough.

2 1/4 cups dates
1 cup sugar
1 cup water
1 cup nuts
1 cup shortening
2 cups brown sugar
