Time 30m

Yield 2 cups

Number Of Ingredients 13

1/4 cup olive oil
1 teaspoon fresh thyme leaves
1 shallot, peeled and chopped
2 cloves garlic, chopped
1 large Spanish onion
1 Vidalia onion, finely chopped
3 cipollini onions, finely chopped
1 medium red onion, finely chopped
Salt and freshly ground black pepper
1 cup fat-free Greek yogurt
1 cup reduced-fat cream cheese
3 scallions, chopped (about 1/2 cup)
1 bunch fresh chives, chopped (about 3 tablespoons)

Steps:

  • In a large saute pan over medium heat, add the olive oil. Add the thyme, shallots, garlic and all the varieties of onions. Saute, stirring constantly. (Onions absorb oil quickly, so add more if necessary.) Continue to cook until the vegetables are lightly browned, about 15 minutes. Remove from the heat and season with salt and pepper. Let cool slightly.
  • In a medium bowl, add the yogurt and cream cheese and stir together. Add in the onions, scallions and chives. Stir well to combine.

Time 1h5m

Yield 6 servings

Number Of Ingredients 16

2 tablespoons salted butter
2 tablespoons olive oil
2 large yellow onions, halved and thinly sliced
2 cloves garlic, minced
2 sprigs fresh thyme, leaves stripped from stalks if tough, minced
2 tablespoons brown sugar
16 ounces whole-milk ricotta
16 ounces sour cream
Kosher salt and freshly ground black pepper
1 tablespoon finely minced chives
1 teaspoon Worcestershire sauce
1/4 cup chopped fresh parsley
Kettle-cooked potato chips
Baby carrots
Radishes
Sugar snap peas

Steps:

  • In a large skillet, heat the butter and olive oil over medium-low heat. Throw in the onions, garlic and thyme and cook, stirring occasionally, until the onions are golden brown and soft, 20 to 25 minutes. Stir in the brown sugar until melted. Continue cooking until very deep in color, 5 to 7 minutes more. Remove from the heat and let cool completely, about 20 minutes.
  • In the bowl of a food processor, add the ricotta and sour cream and process until smooth. Season with salt and pepper, then add the chives, Worcestershire, 2 tablespoons of the parsley and three-quarters of the caramelized onions, reserving the rest for garnish. Pulse 5 or 6 times, until the onions are incorporated but still have some texture. Taste and adjust the seasoning as needed.

Tips:

  • Choose the right onions: Yellow or white onions are best for caramelizing, as they have a higher sugar content than other varieties.
  • Slice the onions thinly: This will help them caramelize evenly and quickly.
  • Use a large skillet: This will give the onions plenty of room to spread out and caramelize evenly.
  • Cook the onions over low heat: This will help them caramelize slowly and evenly, without burning.
  • Stir the onions frequently: This will help them cook evenly and prevent them from sticking to the pan.
  • Add a splash of water or broth: This will help to deglaze the pan and prevent the onions from burning.
  • Season the onions with salt and pepper: This will help to bring out their flavor.
  • Use high-quality Gruyère cheese: This will give the dip a rich, nutty flavor.
  • Serve the dip warm: This will help to keep the cheese melted and gooey.
