Number Of Ingredients 12

1/2 loaf day-old white bread, crusts removed, cut into 1-inch cubes
1/2 cup plus 1 tablespoon extra-virgin olive oil, plus more as needed
9 garlic cloves, 3 lightly crushed, 6 thinly sliced
Coarse salt
3 large onions, thinly sliced
3 to 5 oil-packed anchovy fillets, chopped
1/4 teaspoon crushed red-pepper flakes
1 pound dried spaghetti
1 cup coarsely chopped fresh flat-leaf parsley, plus more for garnish
1/2 ounce (1 tablespoon) unsalted butter
Freshly ground pepper
Parmigiano-Reggiano cheese, for garnish

Steps:

  • Pulse bread in a food processor until coarse crumbs form. Heat 2 tablespoons oil in a large skillet over medium-high. Add crushed garlic, and cook until golden, 2 to 3 minutes. Add breadcrumbs and 1 tablespoon oil, and stir until well coated. Season with salt, and cook until breadcrumbs are crisp and golden brown. Place on a rimmed baking sheet lined with paper towels to drain. Discard garlic, and let breadcrumbs cool completely.
  • Heat 3 tablespoons oil in each of 2 large skillets over medium heat. Divide onions between skillets, and cook, stirring frequently, until caramelized and golden brown, 10 to 15 minutes. (Add a little more oil if necessary.) Combine cooked onions in 1 skillet. Add sliced garlic, and cook over medium heat until golden, about 3 minutes. Add anchovies and red-pepper flakes, and cook for 2 minutes.
  • Meanwhile, cook spaghetti according to package directions in salted water. Drain, reserving 1 cup cooking liquid. Transfer spaghetti to skillet, and toss well. Add reserved cooking liquid, parsley, and butter, and season with salt and pepper. Mix well, then top with breadcrumbs, and garnish with parsley.

Number Of Ingredients 10

1 medium spaghetti squash
2 cups (2 medium) chopped yellow onions
1 cup chopped baby Portobello mushrooms
1 cup tomato sauce
1/2 cup water
2 tablespoons extra-virgin olive oil + extra to coat pan
1 teaspoon garlic powder
1/2 teaspoon salt
1/2 teaspoon pepper
3 eggs, whisked

Steps:

  • 1. Preheat the oven to 400°F and grease an 8x8 casserole dish with olive oil. 2. Cut the spaghetti squash in half lengthwise, scoop out the seeds and place the squash cut-side down on a baking sheet. Bake for 45 minutes, until the skin of the squash is fork tender. 3. While the squash is baking, prepare the caramelized onions and mushrooms. Heat the olive oil in a frying pan over medium-high heat, then add the onions and mushrooms. Lower the temperature to medium and cook the onions and mushrooms until beginning to brown, stirring occasionally to prevent burning, for around 10 minutes. Add the water to the pan and stir the onions and mushrooms to pick up the brown bits in the bottom of the pan. Cook the onions and mushrooms for 8-10 minutes, until there is no more water in the pan. 4. Remove the squash from the oven, scoop out the flesh and place it in the casserole dish. Stir in the caramelized mushrooms, onions, tomato sauce and garlic powder. Add the whisked eggs to the baking dish and mix everything together until you can no longer see the eggs. 5. Bake uncovered for 1 hour in the oven, until the top of the casserole has formed a crust that looks like cheese and is brown around the edges. Let rest for 10 minutes before serving.

Time 1h

Yield 4 serving(s)

Number Of Ingredients 7

2 lbs spaghetti squash
1/2 lb bacon
1 large onion, sliced
2 garlic cloves, minced
salt
pepper
parmesan cheese, to taste

Steps:

  • Cut the squash in half and carefully remove the seeds. Turn upside down in a baking pan. Bake at 375-degrees for about 45 minutes.
  • Cool for 10 minutes, then using a fork, scrape out squash into serving bowl.
  • While squash is cooling, cut bacon with scissors into 1 inch pieces. Cook bacon to half done. Drain off most of bacon grease.
  • Add onions and garic to bacon in pan. Cook together until bacon crisps and onions caramelize, about 5 minutes.
  • Pour bacon/onion mixture over squash. Season with salt, pepper and parmesan cheese.

Tips:

  • Select the right spaghetti squash: Choose a spaghetti squash that is firm and has a deep yellow color. This indicates that it is ripe and will have the best flavor.
  • Cook the spaghetti squash properly: To ensure that the spaghetti squash is cooked evenly, use a fork to poke holes all over the squash before baking it. This will allow the steam to escape and prevent the squash from exploding.
  • Let the spaghetti squash cool slightly before handling it: The spaghetti squash will be very hot when it comes out of the oven. Allow it to cool for a few minutes before handling it to prevent burns.
  • Use a fork to scrape the spaghetti squash strands: Once the spaghetti squash is cool enough to handle, use a fork to scrape the strands away from the skin. This is the easiest way to get long, thin strands that resemble spaghetti.
  • Don't overcook the bacon: The bacon should be cooked until it is crispy, but not overcooked. Overcooked bacon will be tough and chewy.
  • Use a good quality cheese: The cheese you use will make a big difference in the flavor of the dish. Choose a cheese that melts well and has a strong flavor, such as Parmesan or cheddar cheese.
  • Serve the spaghetti squash immediately: Spaghetti squash is best served immediately after it is cooked. This will ensure that the strands are still tender and flavorful.

Conclusion:

This caramelized onion bacon spaghetti squash recipe is a delicious and easy way to enjoy this healthy vegetable. The combination of sweet caramelized onions, crispy bacon, and melted cheese makes this dish irresistible. Serve it as a main course or side dish, and you're sure to impress your family and friends.
