4 1/2 oz can of deveined shrimp (or fresh shrimp)
1 c sifted all purpose flour
1/4 tsp old bay seasoning
1 pinch dill weed
1 Tbsp curry powder ,or to taste
1/4 tsp salt
1 c dairy sour cream
1 large egg,beaten
1 Tbsp melted butter
1/2 tsp baking soda
vegetable or canola oil for frying

Steps:

  • 1. Drain shrimp; chop up very fine. In medium bowl, combine shrimp,flour, curry powder, old bay seasoning,dill weed, and salt. Gradually stir in 1/2 cup of the sour cream until smooth.
  • 2. Then stir in the beaten egg and fold in the rest of the sour cream and the melted butter. Dissolve the baking soda in 1 1/2 teaspoons of warm water. Stir into flour mixture until well combined. Refrigerate at least 30 minutes.
  • 3. In a deep skillet or deep fryer, slowly heat oil(at least 2 inches deep) to 380^ on deep fry thermometer. Drop dough a few teaspoonfuls at a time in the hot oil. Deep-fry, turning once, about 3 minutes on each side, or just until golden-brown. Remove with a slotted spoon and drain on paper towels. Serve warm or cold with coconut or pineapple dip.
  • 4. To Make In The Oven: Pre-heat oven to 375^-to 400^.Drop onto parchment covered baking sheets at least 2 inches apart and bake for 15 to 25 minutes or until golden brown.

1/2 cup diced roasted red pepper (from the jar is okay)
1/2 cup diced pitted kalamata olive (or green olives)
1/2 cup grated pecorino romano cheese (or Parmesan)
2 scallions, diced
2 tablespoons extra virgin olive oil
1/2 teaspoon salt
1/4 teaspoon fresh ground black pepper
1 lb white button mushrooms, cleaned and stemmed
1/4 cup finely chopped fresh basil leaf

Steps:

  • Preheat oven to 400 degrees F.
  • In a medium bowl mix together the roasted red bell peppers, olives, cheese, scallions, olive oil, salt, and pepper.
  • On a baking sheet(you may line with parchment paper if you wish or lightly spray with cooking spray) place the mushrooms, cavity side up.
  • Spoon the filling into the cavity of the mushrooms.
  • Bake until the mushrooms are tender, about 20 minutes.
  • Move the mushrooms to a serving platter, sprinkle with chopped basil, and serve. Enjoy!

CHERRY TOMATO HORS D'OEUVRES

Our guests always enjoy these snacks. They are easy to make and can be stuffed with cooked chicken, ham, tuna, or just celery and onions for a vegetarian dish.

12 cherry tomatoes
1/2 cup celery
1/2 cup onion
3 tablespoons mayonnaise
1 cup cooked chicken

Steps:

  • Slice your cherry tomatoes in half. Scoop out the interior with a melon ball scoop, and place your tomatoes on a serving dish.
  • Make sure your celery and onions are finely chopped. Using a fork and a folding motion, mix them in a bowl with your mayonnaise.
  • Add 1 cup finely chopped cooked chicken (you can also substitute tuna or ham) to the bowl with your celery and onions. Mix with fork continuing your folding motion until you achieve the desired consistency.
  • If you are not adding meat, substitute an additional 3/4 cup each of finely chopped celery and onions.
  • Add more Mayo if you like, but be careful. Too much will make your filling soggy.
  • Using your melon ball scoop, fill each tomato with a scoop of your filling. When all are done, sprinkle with dried parsley flakes, cover, and place in your refrigerator to chill. Serve about 1 hour after making.
  • This recipe makes 24 Hors D'oeuvres. You can increase ingredients proportionately if you want to make more.
